I don't know about you, but whenever I visit a gluten free bakery, I'm always looking to see what their almond croissants are like.
There's just something extra delicious about an almond croissant. Flakey croissant, sweet almond filling, icing sugar dusted on top... pair that with a latte and I am in heaven. My bank balance though? Not so much.
Lately with the cost of living, I've been trying to focus on baking my own treats at home (as I'm sure many of you are too!) - but whilst I love to bake, I am not a pastry chef... and croissants are way beyond my skill/patience level... soooo, meet my favourite store-bought croissant hack.

This hack is one I kind of stumbled upon. We cancelled a brunch with our family as Jensen was sick and I had a bunch of gluten free croissants in my freezer taking up room... so I thought why not experiment with an almond version?
I knew almond croissants were actually twice baked croissants, so why not skip the first bake and try to make my own using store bought croissants?
The end result is the most delicious almond croissants - and a filling you'll find yourself wondering if you can bake on everything... or eat by the spoonful.
Best of all, it's super easy but super delicious - and anyone you share them with will be wondering if you're a pastry chef in disguise.
