Recipe: Chocolate Gingerbread Cookies (Gluten Free & Vegan)

It's beginning to look a lot like Christmas....... especially in our home!

You see, once November rolls around, I decide it's officially a-okay to begin celebrating Christmas. The cookies baking in my oven are most likely Christmas cookies, Alexa is playing Christmas radio, the Christmas decorations start appearing and we are in full on holiday mode.

So I thought I'd kick off November's recipes with a Christmas themed one - and what better recipe that one that combines Christmas spices AND chocolate!

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

I love gingerbread cookies, but chocolate gingerbread cookies are next level delicious. 

Filled with all of the traditional spices but with a sweet chocolate kick, these are one of my favourite Christmas cookies - and they're so easy to make!

The recipe makes a smallish batch, but be warned that you might find yourself doubling or tripling the measurements because these cookies will disappear before your eyes!

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

Don't love gingerbread or cinnamon and ginger spices? You can make chocolate cookies by leaving the cinnamon and ginger out altogether. Instead of a spicy kick, you'll have a sweet chocolate cookie that kids and adults will adore.

I keep things simple by drizzling these with chocolate, but you could easily decorate them with icing, sprinkles or whatever takes your fancy.

So let me share the recipe with you! >> 

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

To make these cookies, you'll need:
  • Butter
  • Brown Sugar
  • Golden Syrup (honey also works but adds a slight honey flavour) 
  • Gluten Free Flour 
  • Cocoa Powder
  • Cinnamon 
  • Ginger
  • Chocolate, for drizzling

Ingredients

  • 80g butter, softened (or a vegan butter)
  • 1/3 cup (65g) brown sugar
  • 1/3 cup (100g) golden syrup
  • 1/2 tsp ground cinnamon (remove if you want plain chocolate cookies)
  • 1 tsp ground ginger (remove if you want plain chocolate cookies)
  • 1 1/2 cups (120g) gluten free plain flour
  • 2 tbsp (15g) cocoa powder
  • Chocolate, for drizzling

Instructions

  1. In a mixer, beat your butter and sugar until light and fluffy. Add in your golden syrup and spices, mixing until combined.
  2. Sift in your flour and cocoa powder, mixing until a soft dough forms.
  3. Shape your dough into a round disc (it will be quite soft), wrap with plastic wrap or baking paper and chill in the fridge for an hour (you can even chill it overnight if you want to make the dough in advance).
  4. When your dough is almost finished chilling, preheat your oven to 180C/355F. Line 4 baking sheets with baking paper and set aside.
  5. Roll your dough between two pieces of baking paper, rolling to about 1/2 cm or 1/4 inch in thickness.
  6. Cut out with cookie cutters and transfer to your lined baking sheets.
  7. If your cookie dough becomes too soft to handle, pop it back into the fridge or freezer to firm up. You can also roll out the dough and chill it to make it easier to cut with your cookie cutters.
  8. Bake your cut cookies for 10-12 minutes or until the edges are set.
  9. Once your cookies are baked, allow them to cool on the tray for 5 minutes before cooling on a wire rack.
  10. Drizzle your cookies with chocolate, chill in the fridge for 5-10 minutes to set and enjoy!

Notes:

  • These cookies will keep for up to a week in an airtight container.


Don't love gingerbread flavours? You can make simple chocolate cookies by removing the spices from this recipe.
