This is one of those recipes.
These two bite recipes are SO easy to make, but they're one of our all time favourites. All you need is one bowl and about half an hour of your time and you've got a whole batch of delicious brownie bites to devour.
During lockdown we haven't been doing too much baking because it's just the two of us at home.
A batch of cupcakes would easily be wasted, a batch of cookies often feels too large and an entire cake feels too indulgent - but a batch of two bite brownies? Sign us up!
These brownies keep really well in a container at room temperature (they've lasted almost a week before we finished them off!) and they also freeze really well so you have a quick dessert or snack to defrost and enjoy.
Better still? They use ingredients you probably already have at home!

To make these Two Bite Brownies, all you'll need is:
- Gluten free plain flour
- Brown sugar
- White sugar
- Cocoa powder
- Butter
- Eggs
- Chocolate chips

Ingredients
- 100g butter, melted
- 1/2 cup (100g) white sugar
- 1/2 cup (100g) brown sugar
- 1 cup (120g) gluten free plain flour
- 1/2 cup (40g) unsweetened cocoa powder
- 1/4 tsp baking soda
- 2 eggs
- 1 cup chocolate chips
Instructions
- Preheat your oven to 160C/320F.
- Grease a mini muffin tin and set aside (alternatively, line your mini muffin tin with paper liners, this will make it easier to get your brownie bites out!).
- Melt your butter and add in your butter and sugar.
- Sift your flour, baking soda and cocoa into a medium sized mixing bowl.
- Add in your butter mixture and eggs and stir to combine.
- Stir through your chocolate chips and place heaped tablespoons of mixture into your mini muffin wells.
- Once you've used up all of your mix, bake your brownie bites for 10-12 mins or until set and the tops are firm and cracked.
- Leave to cool in the pan before carefully removing your brownie bites from the tin. You may need to loosen the bases with a knife to get your brownies out.
- Enjoy immediately or keep in an airtight container in the fridge or at room temperature for up to 3-4 days. These brownie bites also freeze really well to defrost and enjoy later.
Notes:
Want to add some extra oomph? Swap the chocolate chips for white chocolate chips or nuts, or add chopped pieces of your favourite candy bar.
