Because let's be real, when you're stuck at home and there's chips and candy and junk food, you've got to make sure the healthy stuff is just as easy.
These Apricot and Date Triple C Bliss Balls are my current fave.... so much so that I don't think the name does them justice.
As well as apricots and dates, these bites are filled with cashews, coconut and chia seeds. All of these ingredients together create a taste and texture sensation and a healthy treat that feels indulgent.

A food processor and these 5 ingredients are all you'll need to make these gluten free, vegan, paleo and refined sugar free treats. No baking, no chilling, no fuss - just a few minutes of your time.
Apricot and Date Triple C Bliss Balls Recipe
Servings: makes 12 bliss balls

Apricots, Dates, Cashews, Chia Seeds and Coconut combine to create these delicious bliss balls that are raw, vegan, paleo, gluten free, grain free and refined sugar free. A great healthy snack recipe.
Ingredients
- 2/3 cup (120g) dried apricot halves
- 1/3 cup (75g) pitted dates
- 3/4 cup (100g) raw cashews
- 1/4 cup (25g) dessicated or shredded coconut
- 2 tbsp (15g) chia seeds
Instructions
- Add all of your ingredients to a food processor and process until your mix resembles coarse sand.
- The mix should pinch together and hold shape. If not, add a few drops of water and continue processing until the mix comes together.
- Once your mix is processed, "knead" the mix together with your hands to form a single ball.
- Take tablespoon sized pieces of the dough and roll into balls.
- Continue until all of your mix is used up.
- Enjoy immediately, store in the fridge for ~1 month or freeze to store for longer.
