Life has been busy lately.
We're back to hectic work schedules, our free time is full of appointments with kitchen and tradespeople to work out our first stage of renos, our weekends are full of gardening and projects and we're trying to squeeze in time for family and friends too.
For me, busy times call for smart meal choices - so I've been making lots of quick and easy meals that can be made in big batches and frozen for an even quicker lunch or dinner later on.
This has been one of those meals that I can't get enough of. It's quick, easy and packed full of flavour.

We've been eating it just by itself as a vegetarian dinner option - but it's also a delicious side dish served with some grilled chicken or steak.
Don't need it to be vegan? Add in some feta cheese for protein, flavour and a little creaminess. That's our favourite mix in for this versatile dish.
Better still? You can tweak this recipe to use up whatever you have. We've added in frozen peas and corn, added in some eggplant or heaps of capsicum to use up veggies from the garden - the choices are pretty much endless!
To make this recipe, you'll need:
- Quinoa
- Veggies of your choice (we use 1-2 tomatoes, 1 zucchini, 1 capsicum/bell pepper and 1 onion and add whatever else we have)
- Olive oil
- Vegetable or chicken stock
- Crushed tomatoes/passata
- A few extra seasonings

Ingredients
- 1 cup (200g) quinoa
- 1 cup chicken stock or vegetable stock
- 2 cups water
- 1 cup canned crushed tomatoes or tomato passata
- 1-2 tomatoes, cut into wedges
- 1 large zucchini, sliced
- 1 onion, sliced
- 1 capsicum/bell pepper, sliced
- Optional: 1 eggplant, sliced
- 2 cloves garlic, crushed
- 2 tsp olive oil
- Salt and pepper, to taste
- Dried oregano, to taste
Instructions
- Add your quinoa, chicken stock, water and crushed tomatoes/passata to a large saucepan and heat over a medium heat, stirring occasionally until your quinoa is fluffy and cooked.
- Whilst your quinoa heats up, combine your vegetables, oil and garlic and bake at 200C/390F until cooked through and caramelised.
- Add your veggies to your cooked quinoa, season to taste and add feta cheese if desired.
- Enjoy immediately or cool before storing in containers in the fridge or freezer.
