Whilst I love thick and hearty slices of banana bread, my favourite kind of banana muffins are actually more like cupcakes.
Light, fluffy and... dare I say it... moist.
This Easy Blender Banana Muffin Recipe ticks all of those boxes and more - and you don't need a mixer!
Whizzing up the bananas in the blender or food processor is the secret to these soft and fluffy muffins and they'll take you just minutes to make.

To make this recipe, you're going to need just a few simple ingredients:
- Ripe bananas
- Sugar
- Eggs
- Milk
- Gluten free plain flour (or regular plain flour!)
- Baking powder
- Baking soda

A blender or food processor makes these Blender Banana Muffins Recipe SO quick and easy. Gluten free, dairy free and so delicious!
Ingredients
- 2 medium ripe bananas (~150g of banana)
- 1/2 cup (100g) brown sugar or coconut sugar
- 1/4 cup (50g) butter
- 1 egg
- 1/4 cup milk
- 3/4 cup (90g) gluten free plain flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 banana, finely sliced - to top
Instructions
- Preheat your oven to 180C/355F.
- Grease or line your muffin pans with paper liners and set aside
- Add your bananas, sugar, butter, egg and milk to your food processor or blender and blend until smooth.
- Add in your flour, baking powder and baking soda, pulsing until just combined.
- Pour your muffin mixture into your muffin tins/cases, filling about 3/4 of the way full and topping with a slie of banana.
- Bake for 25-30 minutes or until cooked through and golden brown on top.
