I am all about simple and easy recipes, and this Italian Bean Salad definitely ticks those boxes.
Impressive enough to share with friends but easy enough to enjoy for lunch or a weekday meal, I’ve been making up a batch on the weekends for a quick and easy lunch during the week.
It’s packed full of flavour and nutrients and tastes anything but healthy.
Gluten free and vegan, it’s also the perfect recipe to shares with friends as it can be adapted to suit just about anyone’s dietary needs.

Whether you eat it alone or with meat or your main meal, this salad is sure to be a hit!
All you'll need is:
- Red Onion
- Garlic
- Celery
- Chilli (Optional but recommended)
- Capsicum/Bell Peppers (Again, optional but recommended for adding extra flavour)
- Olive Oil
- Canned or Cooked Beans (I used a four bean mix plus cannellini beans)
- Tomatoes (I used cherry tomatoes, but you can use whole tomatoes or even leave them out)
- Balsamic vinegar
- Fresh Parsley

Ingredients:
- 1 red onion, finely diced
- 2 cloves garlic, crushed
- 1-2 small red chillis, diced (optional)
- 1 medium capsicum, finely diced (I used 1/2 red and 1/2 green)
- 1 tbsp olive oil
- 2 cans cooked beans, rinsed and strained (I used 1 can of four bean mix and 1 can of cannellini beans but you can use whatever you have on hand)
- 1 punnet of cherry tomatoes (250g), quartered (or 2 whole tomatoes)
- 1 handful of fresh parsley, roughly chopped
- 1 tbsp red wine vinegar
- Salt and pepper, to taste
Instructions:
- Add your onion, garlic, chilli and capsicum to your pan with your olive oil and saute until softened.
- Add in your beans and stir until heated through.
- Add your tomatoes and parsley to a serving bowl and add your bean mixture and vinegar, tossing to combine.
- Season with salt and pepper and you're ready to eat!
- Serve on its own or as a side dish to chicken, beef, fish or whatever you fancy.
Notes:
This salad can be customised to suit whatever you have at home! Change up the beans, leave out the capsicum, add fresh basil, toasted pinenuts or whatever you like.
