I actually had this recipe photographed and ready to post months ago - but then Coronavirus happened and schools were closed and a lunchbox recipe just wasn’t going to work...
But we’ve been eating this Confetti Vegetable Slice at home for lunch, and with schools starting to go back here in Australia I thought I’d share it anyway!
Whether you’re packing it in a lunchbox or eating it at home, this Vegetable Slice Recipe is an easy healthy lunch recipe that can be made ahead and frozen (or kept in the fridge) for a quick lunch option.
Even better? You can use pretty much whatever vegetables you have in the fridge. Want some extra flavour? Crumble in some feta, throw in some cooked bacon, add cooked chorizo or some shredded cooked chicken - the possibilities are pretty much endless.

Gluten Free Confetti Vegetable Slice Recipe

Confetti Vegetable Impossible Pie Recipe | Packed full of veggies, this Gluten Free Confetti Vegetable Slice Recipe is the perfect meal prep recipe for a quick and easy lunch or light dinner option. Healthy, gluten free, clean eating friendly, freezer friendly and high protein.
Ingredients:
- 4 eggs
- 1 cup milk
- 1 cup grated cheese
- 1 cup shaved ham, chopped (optional)
- 1 small onion, finely diced
- 1 cup fresh or frozen vegetables (we use corn, peas and diced carrot)
- 1/2 capsicum/bell pepper, diced
- 3/4 cup (90g) gluten free plain flour
Instructions:
- Preheat oven to 180C/355F.
- Line a 9x13" baking dish with baking paper and set aside.
- Mix all of your ingredients in a bowl until combined, season with salt and pepper and pour into your prepared baking dish.
- Bake for 30-45 minutes or until golden and cooked through.
- This slice will keep in the fridge for 2-3 days or can be frozen in individual slices to reheat and eat later.
