I'll be totally honest with you. When I first set out to make this recipe, Jesse thought I was ridiculous.... and I didn't really know if it would work out...
But I stuck with it, and as soon as it started baking in the oven, I could tell it was going to be delicious.
This is the kind of recipe that you make and people know you're cooking something delicious before they even get through your front door.
It might not be a pizza, but it certainly smells like one - and it's one of our all time favourite frittatas.
We've been making a big batch every couple of weeks to slice and freeze for a quick and easy work lunch or dinner option when we're rushing from place to place.

The best thing about this recipe? You can totally switch it up to use whatever you have at home.
We've made vegetarian versions, added extra veggies, used extra pepperoni from pizza night, added olives - the possibilities are pretty much endless.
But if you ask me, nothing beats the combination I've included in the recipe below. The capsicum/bell pepper adds so much flavour and the addition of either salami or pepperoni gives that classic pizza flavour.

Gluten Free Pizza Frittata Recipe | The perfect meal prep recipe, this healthy "pizza" frittata recipe combines everything you love about a pizza with a protein packed frittata. Ingredients:
- 1 onion, finely diced
- 1 capsicum, finely sliced
- 1-2 tsp olive oil
- 2 cloves garlic, crushed
- 100g salami or pepperoni, finely sliced
- 1x 400g can tomatoes
- Handful of fresh basil and parsley, finely chopped (you can also used dried herbs, to taste)
- 8 eggs
- 1/2 cup milk
- 1 1/4 cup sliced mozzarella balls or shredded mozzarella
Instructions:
How to cook Gluten Free Pizza Frittata Recipe
- Preheat oven to 180C/355F.
- Grease a pie pan or baking tin and set aside (I tend to use an 8" springform tin with a piece of baking paper on the bottom as well).
- Saute onion and capsicum in oil in a medium frying pan until softened,
- Add garlic and salami/pepperoni and saute until fragrant.
- Add tomatoes and herbs and season to taste with salt and pepper.
- Remove tomato mixture from the heat and set aside.
- Add 3/4 of your tomato mixture to the bottom of your prepared pan.
- Mix your eggs and milk in a mixing bowl, seasoning to taste with salt and pepper.
- Add 1 cup of your mozzarella and pour your egg mixture into your pan, on top of the tomato layer.
- Bake your frittata until just set, before adding the remaining sauce and cheese and baking for another 20-25 mins or until cheese is golden and your frittata is cooked through.
- Allow to cool slightly before slicing and serving.
- This frittata will keep for 2-3 days in the fridge in an airtight container and it can also be frozen to defrost and reheat later.
