This slice combines a delicious shortbread inspired cookie base with a sweet, citrusy topping.

- Icing sugar/powdered sugar
- Butter
- Eggs
- 1 lemon
- Shredded coconut

Gluten Free Lemon Coconut Slice Recipe - Homemade desserts don’t get easier than this lemon coconut slice recipe. Made from scratch with pantry staples you probably already have, this easy recipe will become a family favourite. No condensed milk needed, just lemon, sugar, flour, eggs, butter and coconut.
Ingredients:
- 1 1/2 cups (180g) gluten free plain flour
- 1/2 cup (60g) icing sugar/confectioner's sugar
- 3/4 cup (150g) butter, cut into cubes
- 1 cup (200g) caster sugar
- 4 eggs
- The juice and zest of one lemon
- 1 cup (65g) shredded coconut
Instructions:
How to cook Gluten Free Lemon Coconut Slice Recipe
- Preheat oven to 180C/355F.
- Line a 8" baking pan with baking paper, also covering the sides and set aside.
- Add flour, icing sugar and butter to a food processor and pulse until a soft dough forms (all of the butter should be mixed through).
- Press your base mix into the bottom of your prepared pan, forming an even layer.
- Bake the base for 15 minutes or until lightly golden.
- Set aside base to cool slightly.
- In a mixing bowl, mix your caster sugar, eggs, lemon juice, lemon zest and 3/4 of your coconut, mixing until combined.
- Pour lemon mixture on top of your cooked base and sprinkle the remaining coconut on top.
- Bake for 20 minutes or until golden and set.
- Leave to cool before slicing and serving.
- We like to serve this slice chilled, chilling the slice after it has cooled and then slicing.
- This slice will keep for 2-3 days in the fridge in an airtight container.
