Rocky Road is one of my favourite foodie gifts of all time.  It’s easy to make, easy to customise, easy to gift and seriously impressive to boot. 

All you’ve got to do is melt, mix, chill and slice - only this time I’ve added one extra step. 

And oh what an epic step it is.

The extra step for this Rocky Road involves a blow torch - but you can also use a candle or open flame/fire.

Roasting your marshmallows on one side, like the picture above gives you all of the flavour - but makes sure the marshmallows are still solid enough to mix through your Rocky Road.

ingredients:

  • 150g marshmallows, cut into bite sized pieces
  • 100g gluten free graham crackers or biscuits/cookies of your choice
  • 500g milk chocolate

instructions:

How to cook Easy S'mores Rocky Road Recipe

  1. Place your marshmallows onto a baking tray in a single layer, using a blow torch, toast one side of your marshmallows and leave to cool. (Don't have a blow torch? See below!)
  2. Line a baking sheet with baking paper and set aside.
  3. Once your marshmallows have cooled, melt your chocolate in a heatproof boil - either on the stove using the stovetop method or in a microwave safe bowl in the microwave. 
  4. Add 3/4 of your marshmallows and chopped cookies to your chocolate mixture, mix until combined and spread your rocky road mixture onto your prepared baking tray. 
  5. Top your rocky road with your remaining marshmallows and cookie pieces and chill in the fridge until solid. 
  6. Once your rocky road has chilled, slice into pieces and serve or store in the fridge.
  7. This rocky road is best kept in the fridge in an airtight container and will keep for up to a month.

NOTES:

Don't have a blow torch? You can also toast your marshmallows over a candle. Simply pop them onto the end of a skewer and toast over the flame of the candle, then place on your baking tray to cool.

We also tried toasting our marshmallows in the oven (under the broiler and at a high temperature) but found they ended in a sticky mess - so don't try that!

  1. Ok ok these look amazing. I'm a sucker for anything chocolate + marshmallow. Where do you get your gf graham crackers?? Or do you have an on-shore equivalent?!

    1. I always bring a bunch of packets home from the US, or buy them on iHerb - but if we don't have them, I use Woolworths' Gluten Free Scotch Finger biscuits. SO good!

      That's what I used in the pictured version too! :)
