Our Disneyland vacation is sadly over, but I timed it strategically because it's not all sad.... CHRISTMAS IS COMING!
When you're reading this, we should be back in Australia and by 12pm, I can almost guarantee that you will find me pulling boxes of Christmas decorations out of the roof because the Christmas celebrations start now.
Christmas is my favourite time of year. I love the decorating, I love the food, I love getting to spend extra time with family friends, I love the traditions, I love the music, I love the excitement - I love pretty much every single thing about Christmas.
But especially the treats.
This Peppermint Crunch Rocky Road Recipe is one I came up with last Christmas, but one that quickly became a family favourite. It's so easy to make, but the kind of recipe everyone will ask for because it's seriously delicious.
Even better? It makes the perfect homemade Christmas gift to share with friends, whether they're coming to your house or you're visiting theirs. Simply grab a jar and a pretty Christmas ribbon, fill it with your rocky road, tie it with a bow and you're ready to gift.

Easy Peppermint Crunch Rocky Road Recipe - Traditional Rocky Road gets a Christmas twist with this gourmet mint rocky road. ingredients:
- 200g milk chocolate
- 200g white chocolate
- 100g marshmallows, chopped into smaller pieces
- 6 gluten free mint slice biscuits, crushed (you can also use any mint chocolate biscuit)
- 4 candy canes, crushed

How to cook Easy Peppermint Crunch Rocky Road Recipe
- Line an 8x11" slice tray (or cookie sheet if you don't have one) with baking paper and set aside.
- Place your milk chocolate and white chocolate in separate heatproof bowls and melt using one of the below techniques.
- Once your chocolate is melted, add your marshmallows, biscuits and a handful of your crushed candy canes to your milk chocolate and stir to combine.
- Fold through about 1/2 of your white chocolate mix through your milk chocolate mixture, leaving ribbons of white chocolate through your mix.
- Scoop your rocky road mixture onto your prepared baking sheet, then drizzle over your remaining melted white chocolate.
- Sprinkle your crushed candy canes on top and place your rocky road into the fridge to chill until set (usually 1-2 hours).
- Once your rocky road has set, slice it into pieces with a sharp knife and you're ready to serve, store or gift!
- Serve chilled and store in the fridge in an airtight container for up to a month.
To Melt Your Chocolate in the Microwave
- Place your white chocolate and milk chocolate in two separate microwave safe bowls.
- Heat your chocolate for 15 second intervals, stirring in-between, until your chocolate is melted.
To Melt Your Chocolate on the Stove
- Place your white chocolate and milk chocolate in two separate heatproof bowls.
- Bring about an inch of water to a simmer in your saucepan.
- Set the heatproof bowl on top of the pot, making sure the water doesn't touch the bottom of the bowl.
- Stir frequently, until your chocolate is melted and then remove your chocolate from the heat. Repeat with your second batch of chocolate.
NOTES:
Any mint chocolate biscuits/cookies will work for this recipe! :) If you're in the US, try using thin mint cookies (you may want to use a few extra).
