Easy 4 Ingredient Coconut Cookies Recipe - Homemade cookies just don’t get easier than this. A simple twist on coconut macaroons, this healthy cookie recipe is gluten free, paleo, vegan, sugar free and clean eating friendly.
ingredients:
- 1 cup (100g) shredded coconut
- 1/4 cup (25g) almond meal
- 1/4 cup maple syrup
- 2 1/2 tbsp (35g) butter or coconut oil
instructions:
How to cook 4 Ingredient Coconut Cookies Recipe (Gluten Free, Paleo & Vegan)
- Preheat your oven to 180C/355F.
- Line two baking sheets with baking paper and set aside.
- Add all of your ingredients to a food processor and pulse until combined (Alternatively: Mix them by hand)
- Scoop mixture onto your prepared baking sheets, leaving room for the cookies to spread.
- Bake for 12-15 minutes at 180C or until golden around the edges.
- Leave your cookies to cool completely on the baking sheet before moving to a serving plate or container.
- These cookies will keep in an airtight container for 2-3 days.

Could you kindly confirm if the shredded coconut used is fresh or dried like the flour consistency?
ReplyDeleteHi there, it is dried but not a flour-like consistency (I think you may be thinking of coconut flour?). It is dried shreds of coconut.
Deletenot sure how to form the cookies, is it into a ball or a disk?
