We are currently on vacation at Disneyland in California, USA - but I didn’t want you to miss out on new recipes while we were away, so I’ve been busy creating a whole lot of deliciousness to share whilst we’re away from home!

These Cashew Cookie Dough Bliss Balls Recipe are one of those recipes - and I was actually eating them yesterday on the plane ride here! 

They’re the perfect quick and easy snack that’s healthy, delicious and seriously easy to make. 

Bliss balls are one of my go-to snacks because you can take them pretty much everywhere and they don’t need to be refrigerated (though we store ours in the fridge so they last as long as possible!)

Better still, they’re the perfect recipe to make your own. Don’t have cashews? Swap them for almonds? Feel like something different? Swap the dates for raisins and add cinnamon for a cinnamon raisin cookie dough inspired treat.

Sometimes the simplest recipes are the best - and this recipe is certainly simple as it requires just 4 ingredients and less than 15 minutes of your time!

Easy Cashew Cookie Dough Bliss Balls Recipe (Paleo, Gluten Free and Vegan) - A perfect healthy snack, these cookie dough bliss balls are allergy friendly and perfect for kids and adults. ingredients:

  • 1 cup (150g) raw unsalted cashews
  • 1/3 cup (60g) dates*
  • 1 tsp vanilla extract
  • 1/2 cup (75g) milk chocolate chips**
  • Pinch of salt

instructions:

How to cook Cashew Cookie Dough Bliss Balls (Gluten Free, Paleo & Vegan)

  1. Add your cashews, dates, vanilla and salt to a food processor and process until your mix resembles coarse breadcrumbs and no big pieces remain.
  2. Try pinching your mix together - if it holds, you’re good to go. If it’s still too crumbly, turn the food processor back on and add a few drops of water to bring the mix together, processing until it clumps together.
  3. Once your mix is ready, pulse through your chocolate chips (or stir them by hand if you want them whole).
  4. Take tablespoon sized pieces of your dough and form into bite sized balls, repeating until all of your mix is used up.
  5. Once all of your bliss balls are rolled, enjoy them immediately, or keep them in an airtight container in the fridge until you’re ready to snack.
  6. These bliss balls will keep in the fridge in an airtight container for a month and can also be frozen to defrost and eat later.

NOTES:

*You can use dried dates or fresh medjool dates. I usually use dried dates as they’re cheaper and I buy them in bulk, but you will need a few drops of water to bring the mix together. If you’re using medjool dates and they’re too moist, add some more cashews or a teaspoon or two of coconut flour.
**If paleo or vegan, use suitable chocolate chips or an alternative
