Recipe: Banana Hemp Hippie Muffins

Easy Banana Hemp Hippie Muffins - These gluten free and paleo banana muffins are so easy to make and seriously delicious to eat. Healthier than most other banana muffin recipes, these muffins are lower fat, refined sugar free, lower sugar, gluten free, grain free, clean eating friendly and fussy eater approved. Hemp seeds and chia seeds add nutrition and crunch.


Now, this recipe wasn't given to me by a hippie... nor have I asked a hippie's opinion of them (yet!), but that's just what these muffins ended up being called.

You see, banana muffins are always a favourite - but when you add healthy ingredients like hemp seeds and chia seeds and people find out that you've made them using almond flour and coconut flour instead of regular flour, you find yourself with a bit of scepticism.

But let me tell you, even the fussiest of eaters will happily devour these hippie muffins (and I know for certain because I have a few family members who would scare even the greatest of chefs with their fussiness 😜) 

These muffins may be healthy, but they certainly don't taste like it.

They're moist and super fluffy and super easy to make. Perfect as an on the go breakfast or a healthy snack or dessert, these hippie muffins are sure to become a new family favourite in your house too. 

In fact, you'll probably even prefer them to their gluten-laden counterparts. We do!

Banana Hemp Hippie Muffins Recipe (Paleo & Gluten Free)

Easy Banana Hemp Hippie Muffins - These gluten free and paleo banana muffins are so easy to make and seriously delicious to eat. Healthier than most other banana muffin recipes, these muffins are lower fat, refined sugar free, lower sugar, gluten free, grain free, paleo, clean eating friendly and fussy eater approved. Hemp seeds and chia seeds add nutrition and crunch.

ingredients:

  • 1 1/4 cup (300g/3 medium bananas) ripe mashed banana
  • 2 1/2 tbsp (50g) honey
  • 2 tsp (10ml) vanilla extract
  • 3 1/2 tbsp (50g) butter or coconut oil, melted
  • 4 eggs (~200g)
  • 1/2 cup (55g) coconut flour (I recommend this one for the best results!)
  • 1/2 cup (50g) almond meal
  • 3/4 tsp baking soda
  • 2 tbsp chia seeds
  • 2 tbsp hemp seeds

instructions:

How to cook Banana Hemp Hippie Muffins Recipe (Paleo & Gluten Free)

  1. Preheat your oven to 170C/340F.
  2. Grease a muffin pan or line with paper liners and set aside.
  3. In a medium mixing bowl, mash your bananas and add in your honey, vanilla, melted butter/coconut oil and eggs. If your mix is super thick and seems dry, add 1-2 tbsp of milk or water (the mix should be thick, but shouldn't be difficult to mix).
  4. Mix in your coconut flour, baking soda, almond meal and half of your chia and hemp seeds.
  5. Sppon your muffin mixture into your prepared muffin tins, filling about ¾ of the way full. Sprinkle the tops of your muffins with your remaining chia and hemp seeds.
  6. Bake your muffins for 15-20 minutes or until golden brown and cooked through.
  7. Allow to cool before removing your muffins from the muffin tins.
  8. We find these muffins keep best in a sealed container in the fridge. These muffins will keep for up to a week in the fridge and can also be frozen to defrost and eat later.

    1. Hey! Don't worry about the applesauce. I must have been thinking of a different recipe (our paleo banana bread) when writing out the recipe! All fixed now :)
