A dessert that's paleo, gluten free, vegan, dairy free, refined sugar free AND easy to make?
I promise it's not a fairytale. These Almond Snickerdoodle bars are SO easy to make - and seriously delicious to eat.
... and the recipe came about out of pure laziness.
You see, sometimes I want to bake something, but I want something that's quick and easy - and I don't want to have to go to the shops to buy any extra ingredients... so I start experimenting.
These Almond Snickerdoodle Bars were an adapted version of my Paleo & Vegan Soft Baked Chocolate Chip Cookie Bars Recipe and they turned out so well.
Best of all? They suit so many different food needs that they're perfect for sharing with friends. It's rare that a gluten free, vegan, paleo and egg free person can all eat the same thing - but this recipe ticks all of those boxes!

Paleo & Vegan Almond Snickerdoodle Bars Recipe
Easy Paleo & Vegan Almond Snickerdoodle Cookie Bars Recipe - made with almond butter and almond flour, these snickerdoodle bars are gluten free, grain free, egg free, dairy free, paleo, vegan and refined sugar free. A healthy treat everyone can enjoy!

ingredients:
For the Base
- 1/2 cup (120g) nut butter (we used almond butter, but cashew butter also makes a delicious alternative with less of an almond flavour)
- 1/4 cup maple syrup
- 2 tbsp (30g) applesauce
- Pinch of salt
- 1 cup (100g) almond meal/almond flour
- 2 tbsp (15g) ground flaxseed
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1-2 tsp coconut flour **see notes
To Top Your Bars
- 2 tbsp coconut sugar
- 1/2 tsp cinnamon

How to cook Paleo & Vegan Almond Snickerdoodle Bars Recipe
- Preheat your oven to 180C/355F
- In a mixing bowl, combine your nut butter, maple syrup, applesauce and salt until combined.
- Add in your almond meal, flaxseed, cinnamon and baking powder (and coconut flour, if using) and stir until combined.
- Spoon the mixture into your prepared baking dish and flatten to form an even layer.
- Mix your cinnamon and coconut sugar and sprinkle over the top of your bars.
- Bake for 15-20 minutes or until your edges are firm and golden.
- Allow to cool before removing from the tin and slicing.
- These cookie bars will keep in an airtight container at room temperature for 2-3 days.
NOTES:
If your almond butter is really runny, add 2 tsp coconut flour, otherwise add 1 tsp for firmer bars or no coconut flour for a softer slice.
