These Nut Free Apricot Coconut Bliss Balls have become a favourite in our house. They're super simple to make, delicious to eat and the perfect snack to take with you on the go.
Because they're nut free, they're also school friendly - so you can pop them in your kiddo's lunchbox for a sweet but healthy snack. They're also easily customised - throw in whatever adds ins you like. I've been adding chia seeds, flaxseeds and hemp seeds when I want an extra nutrient boost.

ingredients:
- 1 cup (200g) dried apricots
- 1 cup (150g) dates
- 2/3 cup (66g) shredded or desiccated coconut
instructions:
How to cook Nut Free Apricot and Coconut Bliss Balls
- In a food processor, add all of your ingredients and blend until combined. If your mix is too dry to pinch together, add a few drops of water to bring it together. Be careful not to use too much water or it will be a sticky mess.
- Once your bliss ball mix is ready, roll it into a large ball and then pinch off tablespoons full of the mix, rolling them into bite-sized balls.
- These bites will keep in the fridge in an airtight container for a month or more.
