I often find that the hardest part about creating recipes is actually naming them.
You see, these were a huge hit in our house - but when it came to naming them, we all had different ideas.
Coconut Macaroon Bars? Not macaroon-y enough in texture. Coconut Maple Chocolate Chip Slice? Way too long. Coconut Slice? Possibly misleading.
Eventually, we settled on Maple Coconut Blondies. Is it the right name? I don't know. I guess you'll have to test them out and tell me what you think!
But whatever you call them, these bars are seriously delicious - and so easy to make.
They've become a new favourite in our house with their soft centres and chewy edges. Maple syrup perfectly balances the coconut - and melty chocolate chips are never a bad idea, right?
These bars are also easily customised. Add in nuts, swap milk chocolate chips for white chocolate chips, use flax eggs and coconut oil to make it vegan or egg/dairy free - the possibilities are pretty much endless.

ingredients:
- 1/2 cup (100g) butter, softened* (see notes for vegan options)
- 1/2 cup (100g) coconut sugar or brown sugar
- 3 tbsp (60ml) maple syrup
- 2 eggs*
- 1 cup (100g) dessicated coconut or finely shredded coconut
- 1 1/2 cups (150g) almond meal/almond flour
- 1 tsp baking powder
- Optional: Chocolate chips (I add ~1/2 cup)
- Optional: If not using salted butter, a pinch of salt

How to cook Gluten Free Maple Coconut Blondies Recipe
- Preheat your oven to 180C/355F.
- Line an 8x8" baking dish with baking paper and set aside.
- In a mixer, cream your butter and sugar until light and fluffy.
- Add your maple syrup and eggs and beat until combined.
- Add in your coconut, almond meal and baking powder and mix until combined.
- Stir through your chocolate chips (if using) and spoon your batter into your prepared baking tin. It should be quite thick and sticky.
- Using a wet spatula or wet fingertips, smooth out the mixture to form an even layer.
- Bake your blondies for 25 minutes or until golden and set.
NOTES:
*I've swapped the butter for solid coconut oil and the 2 eggs for 2 flax eggs (2 tbsp ground flax + 6 tbsp water, mixed and left to "gel" for a few minutes) with great success.
