This recipe is not a healthy one, but it is a delicious one - and a gluten free version of a classic Aussie fave. 

This Caramel Slice Recipe is my sister's favourite. Since she moved out, I kind of forgot about it until I was digging through one of the first recipe books I had put together that was filled with my own recipes - and I decided I needed to make some ASAP. 

I'd never before made a gluten free version, but this adapted version is so good you'd never even guess it was gluten free.

It's also ridiculously easy. You can not mess it up. It might seem complicated or time consuming, but I promise it's one of the easiest and most impressive treats you can make.

ingredients:

For the Base
  • 1 1/2 cups (180g) gluten free plain flour 
  • 1/3 cup (70g) brown sugar or coconut sugar
  • 1/2 cup (100g) butter, melted
For the Filling
For the Topping
  • 200g milk chocolate, melted 

instructions:

How to cook Easy Gluten Free Caramel Slice

For the Crust
  1. Preheat your oven to 180C/355F. 
  2. Line an 8x8" baking tin with baking paper, using enough to also cover the sides of the tin. 
  3. Mix together all of your ingredients and press your "dough" into the bottom of your prepared pan. 
  4. Bake your base for 20 minutes before removing from the oven. 
For the Filling
  1. Add your condensed milk, syrup, butter and salt to a medium saucepan and heat over a medium heat. 
  2. Cook, stirring constantly for 8 minutes or until your caramel is thick. 
  3. Pour your caramel onto your cooked base and place back into the oven for another 10 minutes, or until your caramel is bubbly and brown on top. 
  4. Leave to cool on the bench for ~1 hour.
For the Topping
  1. Melt your chocolate and pour an even layer over the top of your cooled caramel and biscuit layer.
  2. Chill in the fridge until set and then cut into pieces with a sharp knife. 
  3. This slice needs to be kept in the fridge and will keep in an airtight container in the fridge for a week (or possibly more... but it will never last that long).
