Can you make brownies on a cookie sheet? It might sound like a disaster waiting to happen, but this recipe proves that you can and you should.
You see, this was half experiment gone right and half experiment gone wrong. A friend had asked me if a regular brownie recipe would work on a cookie sheet because she's not a baker and that's all she had and I was like no no no no no no - but then I thought about it and my no turned into I wonder.
You see, just because I hadn't tried it didn't mean it wouldn't work - so I got to experimenting.
Well, I planned on experimenting... and then I went to Costco and saw these brownie thins and decided I needed to make a gluten free version STAT.
So I got to experimenting that.... still on a baking sheet... but with a different outcome.
Only, my plan for brownie thins/brownie bark didn't work as I had these somewhat puffed up, fluffy brownies. I was feeling a little bit defeated, until I tasted one.
They may not have been brownie thins, but they were THE BEST brownies I'd ever made - and they were successfully made on a cookie sheet.... and we may never make "regular" brownies again.
This recipe is brownie perfection. You get soft and chewy edges (and more edge pieces if you spread it out into a rectangle!!), soft middles and plenty of gooey chocolate chips.
It's also perfect for when you feel like brownies but don't want to make a giant batch - but be warned. If your house is anything like mine, they will disappear in less than 24 hours.

ingredients:
- 1/2 cup (60g) gluten free plain flour
- 2 tsp (10g) gluten free cornflour/cornstarch
- 2 tbsp (15g) unsweetened cocoa powder
- 1/4 tsp baking soda
- 1/2 cup (100g) coconut sugar*
- 2 egg whites
- 2 tbsp (40 ml) liquid coconut oil or a neutral tasting oil (see notes**)
- Pinch of salt
- 1/2 cup chocolate chips
instructions:
How to cook Gluten Free Cookie Sheet Brownies Recipe
- Preheat your oven to 160C/320F.
- Line a cookie sheet/baking tray with baking paper and set aside.
- Sift your flour, cornflour and cocoa powder into a mixing bowl and add all of your other ingredients, mixing until everything is combined.
- Pour your batter onto your prepared tray (it will be quite thick) and spread to form a thin, even layer (mine was about 9x13" or the size of a small slice pan).
- Bake your brownies for 15 minutes before removing from the oven and slicing with a sharp knife.
- Leaving your brownie pieces together, place your brownies back into the oven to bake for a further 5 minutes.
- Remove from the oven and allow to cool on a wire rack.
- These brownies are best on the day that they're made (especially warm from the oven!) but will keep in an airtight container at room temperature for 2-3 days.
NOTES:
*You can also use brown sugar instead of coconut sugar.
**Instead of liquid coconut oil/melted coconut oil, you could use vegetable oil, rice bran oil or melted butter.
