Cookies are always a favourite in our house. They're easy to make, delicious to eat and perfect for sharing.
But whilst Jesse would be more than happy if I only made The Ultimate Vegan Chocolate Chip Cookies Recipe on repeat, I love experimenting with different flavours, ingredients and mix ins.
You see, whilst I hated science at school, I think of myself as a bit of a scientist in the kitchen. I just can't leave traditional recipes alone, I need to play with them. So you'll find me in the kitchen with 6,000 different ingredients, crossing my fingers and toes as I stare down my latest experiment in the oven, hoping with every fibre of my being that it will actually turn out.
And that's exactly what happened with these cookies.

You see, I'm on a bit of a hot chocolate kick at the moment (now that the weather is cold in Sydney!) and when I decided I wanted to make cookies the other day, I decided they had to be hot chocolate cookies.
The only problem was, I'd never had a hot chocolate cookie, never seen a hot chocolate cookie and I wasn't really sure if putting marshmallows in cookie dough was a good idea or an absolute disaster...
So I made the batter, popped them in the oven and then knelt down to see what would happen.

Luckily, this experiment was a delicious success. Whilst I was first a little bit worried as they seemed to be melting into a puddle, they turned into the most delicious cookies - and a new favourite in the SIL house.
The marshmallows melt and then harden to add a sweet, chewy burst of goodness, the chocolate chips are gooey and delicious and the cookies themselves are crisp and chewy on the edges with soft centres.

ingredients:
- 100g butter, softened
- 1/2 cup (100g) white sugar
- 1/2 cup (75g) brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup (120g) gluten free plain flour*
- 2/3 cup (65g) cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- ~ 1 cup mini marshmallows**
- ~ 1 cup chocolate chips
- Pinch of salt
instructions:
How to cook Gluten Free Hot Chocolate Cookies
- Preheat your oven to 170C/340F.
- Line 3-4 baking sheets with baking paper or a silicone baking mat and set aside.
- In a mixer, beat your butter and sugars until light and fluffy, scraping the sides down inbetween beating to ensure everything is incorporated.
- Once your butter is light and fluffy, add in your egg and vanilla and mix until combined.
- Sift your flour, cocoa powder, baking powder and baking soda and add to your mixer with a pinch of salt.
- Mix until everything is incorporated (using a spatula and mixing by hand if needed).
- Stir through your marshmallow and chocolate chips.
- Take spoonfuls of dough (about 1 tbsp), roll into a ball and flatten onto your tray, leaving about an inch of space between each cookie (as they will spread!).
- Repeat until all of your cookie mixture is used up.
- Bake your cookies for ~15 minutes or until the edges are crisp. The cookies will seem really soft but they will firm up as they cool. Keep an eye on the first batch to see how long you'll need to bake each batch.
- Allow to cool before serving.
- Uneaten cookies will store in an airtight container at room temperature for 2-3 days and can also be frozen (as cooked cookies or raw dough) to defrost and eat/bake later.
NOTES:
* This recipe also works with regular flour if you don't need it to be gluten free!
** I never measure my cookie mix ins so simply use as much or as little feels right! Also, make sure that your chocolate chips and marshmallows are gluten free if you're making this recipe gluten free.
