Often times, when people have seen my blog they'll ask me "How do you find the time to bake" and the answer is more often than not, I don't.
I'm not trying to be clever and say "you don't find time, you make time" blahblahblah. Because unless someone can figure out how to make 5 extra hours in a 24 hour day, I'm going to say that's false.
You see, sometimes life just gets so busy that I don't have the time or energy to bake - but then there's those times where I don't have the time or energy but either really want to eat something homemade or have to bake something to bring somewhere/share with people - and then I have to get creative.
These donut muffins are one of those creations. They take literally minutes to make from start to finish and are seriously, ridiculously good. I've kept the recipe as a small batch recipe as that's what we usually make (12 mini muffins), but it's easy to multiply and share with a crowd.
This is one of those recipes that's best eaten on the day they're made (especially when they're still warm), but they will keep in a container for 2-3 days and you can simply re-dip them in the leftover cinnamon sugar when you're ready to eat them.

ingredients:
For the Muffin Batter
- 2 eggs
- 3 tbsp (60ml) maple syrup
- 2 tbsp (3og) coconut oil, melted (or use 2 tbsp liquid coconut oil)
- 1/4 cup (25g) almond meal/almond flour
- 1/4 cup (25g) coconut flour
- 1/2 tsp baking soda
- Pinch of salt
For the Cinnamon Sugar Topping
- 2 tbsp coconut sugar
- 1 tsp ground cinnamon
instructions:
How to cook Paleo Cinnamon Donut Mini Muffins
- Preheat your oven to 180C/355F.
- Grease a mini muffin tray and set aside.
- In a medium mixing bowl, add all of your muffin ingredients and mix until combined.
- Spoon your muffin mix into your prepared mini muffin tin, filling each well about 3/4 full. Repeat until all of your mix is used up.
- Bake your muffins for 8-10 minutes or until golden and cooked through.
- Allow to cool for a few minutes before popping each muffin out of the pan and coating them with your cinnamon sugar mixture (I use a toothpick to run around the edges of each muffin then pop them out of the well and then toss them into my cinnamon sugar bowl to coat one at a time).
- Enjoy immediately or leave to cool completely on a wire rack before storing in an airtight container for 2-3 days. These muffins are best eaten on the day that they're made, however, can easily be revived by re-dipping them into more cinnamon sugar (we usually save the leftover sugar in a separate airtight container).

Another one of my go-to's is pecan pie. I'll buy a storebought pie crust and then make the filling from this recipe (one batch for a small pie crust, two to three times for a large pie crust), bake it and it's ready to go in less than half an hour! That's also my Mum's all time favourite recipe.
