Growing up, we only ever really had one Christmas dessert; my Mum's Christmas pudding.
Sure there would always be chocolate around and a few packets of Walker's Shortbread (keeping in mind that I didn't know I had coeliac disease until I was 19!), but the star of the show was always my Mum's Christmas pudding.
These days, Christmas desserts are a little more elaborate at our house. There's Mum's Christmas pudding, my Gluten Free and Vegan Fruit Cake Recipe, this Gluten Free Snowball Cookies Recipe, my Healthy Pumpkin Pie Recipe for Jesse and a bunch of other desserts I decide we NEEEED to have on Christmas Day....
And this year, I'm adding a new recipe to the list!
These Christmas Brownies are a bit of a cross between a fruit cake, a traditional Christmas pudding and the most decadent chocolate brownie.
They're soft and fudgy with crisp edges and inside you'll find melty chocolate chips, a hint of Christmas spices and little bursts of mixed fruit.
The flavour and texture alone will make these a new Christmas fave.
So let me share the recipe with you! >>
Gluten Free and Vegan Christmas Brownies Recipe
makes one 8" pan of brownies that are gluten free, egg free,
dairy free, vegan, refined sugar free and seriously delicious!
1 cup (120g) gluten free plain flour*
3/4 cup (150g) coconut sugar or brown sugar
1/2 cup (55g) cocoa powder
1/2 tsp cinnamon
1/2 tsp mixed spice
1 tsp baking powder
1/2 tsp baking soda
1/2 cup (120g) unsweetened applesauce
1/3 cup milk of your choice (we used almond)
1/4 cup melted coconut oil or butter if not vegan
1/3 cup chocolate chips
1/3 cup mixed dried fruit
- Preheat your oven to 180C/355F.
- Line an 8" baking tin with baking paper and set aside.
- Add all of your ingredients, except for the chocolate chips and dried fruit, to a mixing bowl and stir until combined.
- Stir through your chocolate chips and mixed fruit, making sure everything is evenly dispersed.
- Spoon your brownie batter into your prepared pan, making sure to form an even layer.
- Bake your brownie for 25-30 minutes or until cooked through and a skewer inserted into the centre removes clean.
Tip! If you love crisp and chewy brownies, add 1/3 cup of mixed fruit to my The Best Vegan Brownies Recipe along with 1/2 tsp of cinnamon and 1/2 tsp mixed spice/pumpkin pie spice.
Notes:
* You can also use regular plain flour if you're not gluten free.
