"What do you think?" "Well, I like it more than the Paleo Banana Bread but it still doesn't beat The Ultimate Vegan Chocolate Chip Cookies Recipe" - for a long time that meant the recipe was ridiculously delicious as it took the #2 spot.
It didn't matter what I did, nothing would take the top spot over those vegan chocolate chip cookies.....
Until now...
I was playing around in the kitchen on a Sunday afternoon and found a lonesome green apple sitting in the bottom of my produce drawer - so I decided it was destined for greatness.
I wanted to make some kind of cake, but then I also felt like apple crumble - so I decided to combine the two.
Little did I know, this humble apple crumble cake would become our family's new favourite.
While it baked away in the oven, the house smelt like fall and after waiting for it to cool a little (hello, impatient), I carefully sliced it into squares and grabbed a piece.
HELLLOOOOOO heaven. It was so good, in fact, that both Jesse and I had eaten four or so pieces each in 5 minutes and were contemplating hiding it from my parents so they wouldn't devour the rest.
It's buttery and delicious and so easy to make - and don't worry if it disappears in seconds because it's best eaten fresh (or that's the excuse we use).
So let me share the recipe with you! >>
The Best Gluten Free Apple Crumble Slice Recipe
makes one slice tray that's gluten free, lower fat and lower sugar
For the cake base:
5 tbsp (80g) butter, cut into cubes
1/3 cup + 1 tbsp (75g) coconut sugar or brown sugar
5 tbsp (80g) applesauce
2 eggs
1 1/2 cups (180g) gluten free plain flour
1 tsp baking powder
1 tsp cinnamon
1 granny smith apple, peeled and diced
For the crumble topping:
1/ cup (50g) coconut sugar or brown sugar
1/4 cup (30g) gluten free plain flour
2 tbsp (30g) butter
- Preheat your oven to 180C/355F and line a slice pan with baking paper. (You can also use an 8x8" tin if you don't have a slice tin)
- In a mixer, beat the butter and sugar for your cake base until light and fluffy.
- Add your applesauce and eggs, scraping down the sides to incorporate everything.
- Add in your sifted flour, baking powder and cinnamon and mix until just combined.
- Stir through your apples and scoop your mixture into your prepared slice tin, smoothing out the edges to form an even layer.
- In a food processor or blender (or by hand, the food processor is much faster though!), add your topping ingredients and pulse until the mix resembles find breadcrumb.
- Press your crumble topping together to form a ball and break off pieces, crumbling them over your cake base.
- Bake your slice for 40-50 minutes or until golden and cooked through.
- Allow to cool slightly before slicing and serving. This slice is best on the day it's made, but can be kept for 2-3 days in an airtight container at room temperature or frozen to defrost and enjoy later.
