There are so many “recipes” I make on a regular basis that I haven’t shared on the blog. Usually it’s because I think they’re too simple and not “recipe worthy” (because it’s literally one or two steps or ingredients) and this is one of those “recipes”.
It’s something I made when I first found out I was a coeliac. I was on an elimination diet to work out other food intolerances and there were so few foods I could eat... but bananas and cottage cheese were on the okay list and when I found myself with a serious ice cream craving, I decided to experiment.
Seven years later and it’s still something I make regularly. Anytime I have ripe bananas sitting in the fruit bowl that aren’t going to be used, I’ll chop them up and freeze them to make this healthy sweet treat.
You can enjoy it for breakfast, snacks or dessert, enjoy it on its own or top your bowl with delicious toppings - the choice is yours!

Two Ingredient Banana Protein "Nice Cream"
makes one serve that is gluten free, refined sugar free,
clean eating friendly, low fat, nut free, soy free and kid friendly
1 1/2 cups frozen banana slices
2-3 tbsp cottage cheeseOptional: toppings of your choice
- Add your frozen banana and cottage cheese to a food processor and blend until smooth, stopping to scrape down the sides and mix everything together every now and then to ensure no lumps remain.
- Scoop your mix into a bowl and enjoy as is or top with toppings.
Note: The measurements for this recipe aren’t accurate as I usually just add as much as I have and add just as much cottage cheese as needed to get the right consistency. You can also mix in a tablespoon or so of nut butter, chia seeds, chocolate chips or whatever you fancy. Make it your own!
