Recipe: 4 Ingredient Chocolate Peanut Butter Bliss Balls (Date Free, Gluten Free & Vegan!)

Jesse and I have been together for ten years, and he's been eating food I've cooked for nine years (hello long distance relationship) - but somehow he still manages to be surprised by the creations I come up with. 

Considering the first thing I ever made for Jesse was a batch of chocolate chip cookies that he devoured in such abundance he actually made himself sick - you think he'd realise I was pretty good in the kitchen. 

But when I made these Chocolate Peanut Butter Bliss Balls (known as Snickers Balls in our house), his response went a little like this; 

Now THAT is peanut butter goodness.
Wow.
Wow.
YOU are amazing... do you know that?
Wow. These are GOOOOOOOOOOOD.
You are amazing... do you know that?
How many can I eat?
Just... ah... er... go over there for a bit and leave me here with them...

If I was an ego maniac I'd have a big head - but luckily he also makes sure to let me know when my hair is really frizzy, when my jokes aren't funny AND when I've embarassed myself among other things - so my head is normal sized 😉

But I promise he wasn't exaggerating when he said these were good - because they are AMAAAAAAAZING. And if that's tooting your own horn, I'll toot away all day!

Simple to make and seriously delicious to eat, they've become a favourite in our house - and you'll often find them on the top shelf of a fridge in a jar or container, waiting for whenever we feel like something sweet.

It's a healthy treat that tastes seriously indulgent - and it's gluten free and vegan to boot!

So let me share the recipe with you! >>



Four Ingredient Date Free Chocolate Peanut Butter Bliss Balls Recipe - one bowl, gluten free, vegan, paleo, peanut free, sugar free, healthy

Date-Free Chocolate and Peanut Butter Bliss Balls
gluten free, vegan, high protein, clean eating friendly, grain free, refined sugar free
makes 24 small bites or 12 larger bites 

1 cup (150g) roasted and salted peanuts 
1/2 cup (75g) roasted and salted peanuts, chopped (set aside and add these last) 
1/2 cup (120g) peanut butter
2 tbsp (40g) brown rice syrup or maple syrup 
1/4 cup (20g) cocoa powder
  • Add your 1 cup of peanuts, peanut butter, brown rice syrup and cocoa powder to a food processor and process on high until your mix starts to clump together. (When you pinch a piece together it should pinch together - if it's too dry, add an extra tbsp of brown rice syrup or peanut butter to get the right consistency - or if it's too wet, add some extra peanut butter or a little bit of coconut flour)
  • Add your 1/2 cup of chopped peanuts and mix until everything is incorporated.
  • Pinch and form your mix into bite sized balls, repeating until all of your mix is used up. If your mix is too wet/dry, use the tips above!
  • Enjoy immediately or place your balls into an airtight container and place into the fridge to chill and enjoy later.
  • These bites will keeps for weeks in the fridge in an airtight container and can also be frozen to defrost and eat later.
