Recipe: 3 Ingredient Date-Free Caramel Bliss Balls (Paleo & Vegan!)

I love dates.

Not the let's go out to a restaurant and share plates of spaghetti kind of date - I'm talking about the sweet, caramel like natural candy dates. But recently - I've realised that not everyone does. 

Dates seem to be one of those polarising ingredients that you either love or hate. 

So when a friend told me she hated bliss balls because they were always made with dates, I was off on a mission. 

You see, whilst I have plenty of date free bliss ball recipes (like this ANZAC Cookie Bliss Balls Recipe, Cookie Dough Protein Balls Recipe or these Caramel Latte Protein Balls Recipe), I didn't have a pure caramel bliss ball recipe.

Because, whilst my lovely friend hates dates, she loves caramel - so I needed to come up with an alternative.

Enter these three ingredient Date Free Caramel Bliss Balls.

Yep, you heard me right THREE INGREDIENTS and you don't even need a food processor. 

There's just one problem.
They're ridiculously delicious and so easy to make.... so you will probably struggle to keep them around for more than 0.0000001 seconds. 

But that's not such a bad thing...
So let me share the recipe with you! >> 




Three Ingredient Date Free Caramel Bliss Balls Recipe - one bowl, gluten free, vegan, paleo, peanut free, sugar free, healthy

Three Ingredient Date Free Caramel Bliss Balls Recipe
gluten free, vegan, paleo, clean eating friendly, refined sugar free 
makes 10 small bites or 5 larger bites, easily multiplied

1/4 cup (60g) almond butter or cashew butter*
4 tbsp coconut flour (I recommend this one), more if needed
Pinch of salt (optional if your almond butter isn't salted) 
  • In a mixing bowl, combine your almond/cashew butter and maple syrup until smooth. If you nut butter is really thick, I find it's easier to stir it if you place your heatproof mixing bowl ontop of a small saucepan of boiling water (like you'd use to melt chocolate), stirring until everything is incorporated.
  • Once your nut butter and maple syrup is combined, add your coconut flour and salt (if using). 
  • Mix everything together, leaving it sit for a few seconds to firm up. If you mix is still really wet after sitting for a few minutes - add a little more coconut flour, adding just 1 tsp at a time. 
  • Once your mix is together, roll your bliss balls to the size you desire and enjoy them as is or place them into a jar or container to chill in the fridge!
  • These bliss balls can be kept for 2-3 weeks (probably longer!) in an airtight container in the fridge - and can also be frozen to defrost and enjoy later. 

*You could use kind of nut/seed butter but I find that cashew and almond butter gives the best flavour! The almond butter pictured was Crunchy Barney Butter Almond Butter
**You could use sugar free maple syrup if you need it low sugar - but I like to use real natural maple syrup!
