Recipe: Paleo Chai Spiced Nut Bread

Paleo Chai Spiced Nut Bread – gluten free, grain free, dairy free, clean eating friendly, sugar free

You know what I've realised... 

Whenever you make something thinking that no one else will like it (read: you get it all to yourself), everyone will love it. 

Every.
Single.
Time.

That means that item you thought you'd get all to yourself ends up being the thing that you only get one piece of because it disappears in 0.0000000001 seconds. 

That's exactly what this Chai Spiced Nut Bread was.

I created it as an experiment. It was a new version of my The Best Healthy Paleo Banana Bread Recipe (the most popular recipe on the blog) and I thought; "heh, everyone else isn't a fan of chai tea or chai spices so this will be ALLLLLLLLL MINE".

Great plan, Kristy... not

I made it whilst everyone else was out at work (here I was thinking this was all part of my genius plan) and popped it into a container in the fridge before everyone got home. 

But that only attracted them more. 

The lure of the mystery baked good in said container was too much to bare for the SIL household and pretty soon, my loaf started disappearing. 

Slice by slice, piece by piece (because SIL mama can never take a single piece of things - she breaks each piece into sections to eat bit by bit which drives my type A brain nuts when I see slices and then little bits). 

And before I knew it, it was gone.

But luckily for my family, this recipe is SO simple to make.... so I just whipped up another batch (and doubled it... and hid a bunch of slices in the freezer for me to defrost and eat later)... now that is a smarter plan). 
So let me share the recipe with you! >> 




Paleo Chai Spiced Nut Bread – gluten free, grain free, dairy free, clean eating friendly, sugar free

Paleo Chai Spiced Nut Bread Recipe makes 1 small loaf/9-10 slices
lower fat, lower sugar, grain free, paleo, refined sugar free

1 1/4 cup (300g) unsweetened applesauce
1/4 cup (50g) honey
2 tsp (10ml) vanilla extract
3 1/2 tbsp (50g) butter or coconut oil, melted 
4 eggs (~200g)
1/2 cup + 2 tbsp (65g) coconut flour (I recommend this one for the best results!)
1/2 cup (50g) almond meal
3/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp ground ginger
1/4 tsp ground cloves
Pinch of salt 
~1/2 cup chopped pecans or nuts of your choice (I just throw in as many as I think I need and add some more on top)
  • Preheat your oven to 170C/340F.
  • Grease and line a small loaf tin (we used this 21cm x 7.5cm deep loaf tin) and set aside.
  • In a medium mixing bowl, combine your applesauce with your honey, vanilla, melted butter/coconut oil and eggs.
  • Mix in your coconut flour, baking soda, almond meal and spices and allow to sit for two minutes. The mix will look really runny at first, but the coconut flour will soon absorb the liquid and form a thicker batter. It's more of a pancake batter consistency than a thick cake batter, however, if your mix is extremely liquidy, add in coconut flour one teaspoon at a time (I don't recommend doing this unless your coconut flour is not very absorbent - if you use this coconut flour you'll have a perfect batter!)
  • Pour your bread mixture into your prepared loaf tin, top with extra chopped pecans/nuts and bake for 40 minutes to an hour (keep an eye on it - cooking times will depend on your pan size) or until your loaf is cooked through and a skewer inserted into the middle removes clean.
  • If your bread is browning too quickly but isn't cooked in the middle, cover it with foil.
  • Allow to cool completely before slicing.
  • We find this bread keeps best in a sealed container in the refrigerator and it will keep for up to a week. You can also freeze the slices by wrapping the slices individually and storing them in a sealed zip lock bag in the freezer.

I always tell Jesse that sharing food was never in our marriage vows... (that is, if I have a piece of chocolate cake - he isn't getting a look in - but I will give him another slice from the cake that I'm not eating, haha!).
