Why hello there, Happy New Year!
I didn't get around to posting on Monday as I was too busy soaking up the sunshine and hanging out with Jesse - but luckily we've been busy in the kitchen and I've got a recipe for you too!
It's currently summer in Australia and it's pretty hot! Sure, we've had cold snaps here and there - but generally speaking? The days are long and lovely and seriously hot!
That means the air conditioning has been on and days by the pool are a must - as well as ice cream and popsicles!
These popsicles are a SUPER quick creation that are not only gluten free and vegan but seriously delicious - and secretly good for you.
They don't have any added sugar (unless you want them to!), they take just seconds to make and they're a huge hit with everyone. From the littlest eaters to the older and wiser ones too.
After Christmas, we had a bunch of leftover fruit and not enough time to eat it all before it overripened or went bad - so I blended it all up to make some delicious popsicles. Whilst this recipe is for Pineapple and Coconut Popsicles - you can mix things up and use whatever fruit you have at home (including frozen fruit - it doesn't have to be fresh fruit!). But I've explained all of that in the recipe below!
So let me share the recipe with you! >>
Paleo and Vegan Coconut Pineapple Popsicle Recipe
gluten free, vegan, paleo, sugar free, clean eating recipe, healthy
2 cups chopped pineapple (fresh, frozen or canned works)
1/2 cup canned coconut milk (full fat is creamiest)
1/2 cup almond milk or milk of your choice (you can use all coconut milk for a creamier popsicle if you prefer!)
- In a blender, combine your ingredients until smooth.
- Pour your mixture into popsicle moulds and freeze until hard.
- Remove your popsicles from the mould and enjoy immediately!
Flavour Alternatives: Feel free to swap the pineapple for 2 cups of any fruit (the only ones I probably wouldn't suggest are apples!). You can also swap the coconut milk for equal amounts of thickened cream or yogurt - or use all milk/almond milk etc. If you use all almond milk etc you won't get the same creamy consistency but they'll still work.
