Recipe: No Bake Chocolate Coconut Crunch Bliss Balls

No Bake Chocolate Coconut Crunch Bliss Balls Recipe - gluten free, vegan, sugar free, clean eating recipe, nut free, dairy free, egg free, lunchbox snacks, energy bites, raw balls

I know that, for most people, a new year brings new goals and new year's resolutions.

But for me? It just brings another day.

I know there are lots of people who are eliminating sugar or dairy or grains or eating a paleo diet or doing a detox... but me? I'm just eating.

You see, I'm one of those people who thinks that life is too short not to eat chocolate - but I'm also one of those people who gets stupidly excited over the first mangoes of the season, screams to pull the car over when a roadside cherry stall is spotted and who eats salads out of salad bowls because there are very few eating vessels that can match my appetite for fresh produce.

I'm the type of person who thinks the "treat yoself" idea needs to be applied every day at least a few times a day.... and also the type of person who thinks the world would be a much better place if we all ate more chocolate... because really, can you be angry when you eat chocolate?!

Chocolate is the kind of thing that could totally stop world wars...

But, I digress...

What I'm trying to say is; restriction isn't always the best idea (I would say isn't full stop - but there are some things that are never a good idea and that should be restricted...).

And whilst you will commonly find treats made without refined sugars or artificial additives or gluten or allergens here - it's not because I think you need to eat a "diet" with labels. It's because I think everyone deserves to eat delicious food.

So, my friends, as my second recipe of the year - I want to share something that's sweet, delicious, allergy friendly and healthier too. Because life is too short not to treat yourself.

These bliss balls are SERIOUSLY delicious (and even regular bliss ball hating people will love them). They're crunchy and crisp and full of texture and flavour and no one will ever guess they're an allergy friendly or healthier treat.
So let me share the recipe with you! >>

No Bake Chocolate Coconut Crunch Bliss Balls Recipe - gluten free, vegan, sugar free, clean eating recipe, nut free, dairy free, egg free, lunchbox snacks, energy bites, raw balls

Chocolate Coconut Crunch Bliss Balls Recipe
gluten free, vegan, dairy free, nut free, refined sugar free,
egg free, healthy, clean eating friendly recipe
makes 14 bites

1 cup (150g) pitted dates
3 tbsp (45g) coconut oil
2 tbsp (15g) cocoa powder
Pinch of salt
1/4 cup (20g) coconut plus another 1/4 cup to roll your bites in
2 cups (35g) puffed rice cereal
  • In a food processor, process your dates until chopped.
  • Add your coconut oil, cocoa powder, salt and coconut and process until combined.
  • The mixture will look quite wet, but don't worry! It will come together.
  • Pour your date mixture into a mixing bowl and add your cereal.
  • Using your hands, mix the date mixture and cereal together until combined. You'll need to almost knead the mixture together so that it clumps together.
  • Form your mixture into balls about 1 heaped tablespoon in size.
  • Place your extra 1/4 cup of coconut into a small bowl and roll your balls into the coconut to cover the outside.
  • Place your balls into a container or onto a plate and chill until firm.
  • Enjoy immediately and keep these bites in the fridge in an airtight container for up to a month (though, good luck trying to keep them that long!). Alternatively, these bites can also be frozen to enjoy later on. Just take them out of the freezer for a little while before eating them.
But tell me,
What would be the ultimate way to "treat yo'self".
And I said ultimate - so you can be elaborate as you like....

I feel like my ultimate way to treat myself would involve all of my favourite things... chocolate... books... friends... family... warm weather... sunshine... beaches.... pretty things...

So you'd probably find me on a beach with my friends and family, reading books with a never ending supply of chocolate. Oh and I'd probably be getting a massage at the same time because you can never go wrong with a massage.
