It's that time of year... 

I find myself playing Christmas music while I work... 
The Christmas decorations are slowly creeping in one by one..
The evenings are filled with the sound of cicadas... 
The breeze through my office window is warm and yet refreshing at the same time..
The smell of my Mum's Christmas pudding fills the house as it boils away... 

Christmas is coming and I cannot wait. 

Not for the presents - but for family and celebrations and food. I think Christmas food has to be my favourite cuisine (that's got to be a cuisine, right?!). Especially those foods you'll find on the dessert table. 

Cakes and muffins and cookies and puddings filled with warming spices, chocolate and peppermint treats in abundance. There's nothing better than Christmas desserts - and I knew exactly what kind of treat I wanted to start my Christmas baking with: the simplest one.

You see, there's nothing fancy about these muffins. 

They're brown, they're plain, they're boring - but that's what makes them so surprisingly good.

You see, looking at these muffins, you wouldn't expect anything spectacular. But tasting them? That's a whole different story.

They're soft and fluffy and taste just like Christmas should do. 

But best of all? They are super simple to make and are sure to become a family Christmas staple. Not only are they paleo, they're also gluten free, lower in sugar and lower in fat so they're the perfect healthier Christmas treat. 

Whip them up in just a few minutes and you're ready to wow Christmas guests or totally out-do everyone else's desserts at a holiday gathering 😉

Easy One Bowl Paleo Gingerbread Muffins Recipe – gluten free, grain free, paleo, dairy free, sugar free, low fat, healthy dessert recipes, clean eating recipe, healthy Christmas recipes

Easy  One Bowl Paleo Gingerbread Muffins Recipe
makes 10 regular muffins that are gluten free, paleo, grain free,
reduced sugar, low fat and a clean eating recipe

3 eggs 
1 cup (240g) unsweetened applesauce 
2 tbsp (40ml) melted coconut oil or liquid coconut oil 
1 tsp ground cinnamon 
1 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cloves 
1/2 cup (100g) coconut sugar or brown sugar
3 tbsp (60g) molasses
1 tsp vanilla extract 
2/3 cup (75g) coconut flour (we recommend this one - also available here)
1/2 tsp baking powder
1/2 tsp baking soda 
Pinch of salt
  • Preheat your oven to 180C/355F. 
  • Line a muffin tin with paper liners and set aside (see notes).
  • In a medium sized mixing bowl, add your eggs, applesauce, coconut oil, spices, sugar, molasses and vanilla and mix until combined.
  • Add all of your remaining ingredients and mix until combined.
  • Allow your batter to sit for a minute or so to thicken slightly. 
  • Spoon your muffin batter into your tins, filling almost completely to the top. 
  • Bake for 15-20 minutes or until your muffins are firm to the touch and cooked through. They will feel a little softer than normal muffins but will firm up as they cool. 
  • Allow your muffins to cool before removing them from the tin. 
  • Enjoy immediately or keep in an airtight container in the fridge for 2-3 days. These muffins also freeze really well to defrost and enjoy as you like!
Notes:
  • You can grease your muffin tins instead of using paper liners, however, they tend to stick to the tin. If you do decide to make them without the liners and find they stick to the tin, pop the tin into the freezer until your muffins are firm, run a knife around the edge of the tin and they should pop out easier. Alternatively, you can use a lightly greased silicon muffin tin as they muffins don't tend to stick as much to them!
