Pancakes are one of those things that I rarely make because I feel like they're too much effort - but then I make them and I'm like what on earth was I on about?!? because they're actually stupidly simple.... or at least my pancake recipes are.
Whilst pancakes may seem like a breakfast food that requires a little too much effort first thing in the morning, I promise you these pancakes are SO easy to make - and even more delicious.
And you might be thinking yeaaaaaaaaah, but... I see those banana pieces you have on top there.. you've just added another step.... and you'd be right... but it's a strategic step, my friend.
You see, these pancakes are a bit like myself... they're even better if you leave them to just chill out for a few minutes. Whilst your pancakes are chilling, just throw your banana chunks into your hot pan, add some coconut oil or butter and before you know it you'll have delicious caramelised banana pieces and pancakes that are ready to be dressed up and devoured.
Before you know it, you'll have a fork in hand and pancakes in your belly and you'll be wondering why you don't make pancakes more often...

But let me share the recipe with you so you can try them! >>
Single Serve Vegan Banana Pancakes Recipe
low fat, gluten free, clean eating friendly, refined sugar free,
egg free, dairy free, vegan, nut free, soy free
For the pancakes:
1/2 cup gluten free plain flour
1 tsp baking powder
2 tbsp mashed banana
1 tsp vanilla extract
pinch of salt
1/4 cup milk of your choice (use only as much as needed)
For the sauteed bananas:
1 small banana
1-2 teaspoons of coconut oil or butter (for a non vegan version)
1-2 teaspoons of coconut oil or butter (for a non vegan version)
Optional: a sprinkle of coconut sugar or brown sugar
- Mix all of your pancake ingredients together and leave to sit whilst you prepare your pan.
- Lightly grease a non stick frying pan and heat over a medium-low heat. Place a clean plate by your stove to cool your cooked pancakes.
- Spoon your pancake mixture onto your heated pan and spread the pancake batter out with the back of your spoon. The mixture will be quite thick.
- Cook your pancakes just until the bottom is golden and then flip them over to cook on the other side (they won't make obvious bubbles like some other batters).
- Cook your pancakes on the opposite side until they are nice and golden brown.
- Remove your cooked pancakes from the pan and set aside on a plate.
- Continue until all of your pancake batter is used up.
- While your pancakes are cooling slightly, add your bananas to your hot pan and turn the heat up to medium.
- Add your coconut oil/butter and sugar (if using) and saute your bananas until brown and caramelised.
- Stack your pancakes, top with your sauteed bananas and you're ready to add any extra toppings and devour!
