I am a chocoholic. There are no doubts about it.
Always have been, always will be and I have absolutely no shame about it.
That's why I almost always opt for chocolatey treats and baked goods over any others - but also because they taste so ridiculously good!
These muffins are not different. They're chocolatey and delicious but they have a little hidden secret.
Whilst they're super moist and fluffy - they're actually completely flourless... and even paleo.
But do they taste paleo? Or even remotely healthy? Absolutely not. Even Jesse who claims he hates any baked goods with coconut flour, absolutely loves this recipe.
They make the most perfect cupcakes or double chocolate chip muffins and this recipe can even be doubled and used to make a cake.
But best of all? They take just minutes to make and once they cool for a little bit, they're all yours to devour!
So let me share the recipe with you! >>
Healthy Paleo Chocolate Muffins Recipe (Or Cupcakes!)
makes 5 muffins/cupcakes that are gluten free, grain free, paleo,
refined sugar free, clean eating friendly, nut free and soy free
2 eggs
1/4 cup unsweetened applesauce
2 1/2 tbsp (50g) honey
2 tbsp (30g) melted coconut oil (I used CocoEarth Liquid Coconut Oil (I used CocoEarth Liquid Coconut Oil)
1/4 cup (25g) coconut flour
2 tbsp (15g) unsweetened cocoa powder
1/2 tsp baking soda
Pinch of salt
Optional: 1/2 cup chocolate chips
- Preheat your oven to 180C/355F.
- Line a non-stick muffin tin with paper liners and set aside.
- In a medium mixing bowl, add your eggs, applesauce, honey and coconut oil and mix until combined.
- Add in your coconut flour, cocoa powder, baking soda and salt, mixing until just combined.
- Stir through your chocolate chips (if using).
- Spoon your muffin batter into your prepared cupcake tins/cases, filling almost completely to the top.
- Bake for 20-25 minutes or until cooked through and a skewer inserted into the middle removes clean.
- Allow to cool in the tins before removing from the tins and enjoying or placing in an airtight container to enjoy later.
