You know what I've realised lately?
My husband comes home from work every day and immediately looks around the kitchen to see if I've been baking or cooking something.
Yesterday, Jesse came home from work to find a batch of blueberry muffins on top of the stove from a sort of failed recipe test. I said "oh, you won't like them" and he thought I was lying to fake him out of trying them because they were actually delicious and I didn't want to share so he ate one (and loved it - I was wrong!).
But as he went to the fridge to get some water, he spotted these cookie dough bites.

What are theseeeee?!?!
Before I knew it, he'd popped open the container and had grabbed one for himself.
With a mouthful of food, he looked at me with wide eyes.
WHY HAVE YOU BEEN HOLDING OUT ON ME?!
These are SO good!
They're mine... alll mineeee!
Then I realised why I usually hide these cookie dough protein balls 😝
So since I have to share them with my husband (and they were such a huge hit!), I thought I'd share them with you too!
So let me share the recipe with you! >>
Easy No Bake Cookie Dough Protein Bites Recipe
makes 12 cookie dough balls that are gluten free, refined sugar free,
egg free, grain free, paleo option, vegan option
1/2 cup (125g) nut butter*
1/4 cup maple syrup
1/2 cup whey protein**
3 tbsp coconut flour
1/4 cup chocolate chips
- Add your nut butter, whey protein, coconut flour and maple syrup to your food processor and process until combined. If needed, add water 1/2 teaspoon at a time until your mix starts to come together or add a little extra coconut flour if the mix is too runny.
- Your mix will be ready to roll when it can be pressed together with your fingertips (it will look crumbly but come together as soon as it’s pressed). Take a heaped tablespoon of mix and squeeze and roll the mix into balls.
- Once you’ve rolled your cookie dough ball, press your chocolate chips into the outside and squish the ball together to compact it. This makes sure it doesn't crumble apart!
- Repeat until all of your mixture is rolled and enjoy!
Notes:
*Almond or cashew butter gives the most cookie dough flavour, however, we love them with peanut butter too! I've used this recipe with both natural nut butters and processed (with added sugar/oil) and both work perfectly - you just need to adjust the amount of coconut flour as needed!
**I use an unflavoured and unsweetened 100% Natural Whey Protein Powder which I prefer (as you can use it in sweet/savoury etc and there's no artificial ingredients), however, you can try this with your favourite protein powder, peanut flour - or a vegan option if required. The unflavoured whey protein will give you the most "cookie dough" like taste though - so keep that in mind!
