It's Fri-YAY! And I potentially jinxed myself last week by declaring not-cray-May because this week has been more cray than not.
Nevertheless, I have lotttttttttttsssssss to share with you this week so lets jump into it!

Recent Focus: I've been trying to focus on the positives even more than normal this week.
Things like,
It may be cold - but at least I can wear onesies and beanies and sweaters and all the warm clothes.
It may have rained a lot - but at least we have pretty flowers in the garden.
I may be running around like a headless chook - but at least I'm blessed with work!
Jesse may have to go away for work - but at least I get to eat all the things he doesn't like :P
Recent Joy: The lovely Emily organised a blogger swap recently and I was lucky enough to be paired with Megan!
Even though Australia and New Zealand are super close, the shipping prices are ridiculous and thus we decided to spoil each other with iHerb packages instead! Megan's package for me arrived a week or so ago but I anxiously awaited the arrival of her packages before I opened mine. Hers arrived yesterday and I opened mine to find a whole lot of goodness! I was paired with the lovely Ashleigh from Quintessentially Me who put together this lovely package for me with a NEOM Organics Candle, Whittard English Breakfast Tea, Crabtree & Evelyn Hand Cream and a Butter Nail Polish.
For Ashleigh, I sent off a package filled with lots of gorgeous marble and copper homewares as well as some chocolate and different bits and pieces I thought she might like! TNT are super speedy and our packages were flown across the world in just a matter of days!
Recent Lunches: This week I've been feeling the chill, however, luckily past Kristy thought to make a huge batch of Healthy Millet Egg Bakes to store in the freezer and I've been having them for lunch all week! So warm and filling and so so delicious!
Recent Outfits: I only posted one outfit this week, however, since it involved a whole lot of pink I think it makes up for the lack of other outfits :P
Just a super simple church outfit with a bright pink maxi skirt, black blouse, cream cardigan, sparkly flats and a statement necklace.
Recent NEED: This mermaid tail blanket. Do I even need an explanation?!
Recent Fave: My unicorn socks. These ones are from Kmart Australia and it's safe to say they're my favourite socks. Best of all? They come in a three pack with rainbow socks too :P Anddddddddd I think they're all of $3.
Recent Must Have: My Goddess Ultimate Straightener. I'm not usually a straightener girl as I feel like it leaves my hair dry and bleh, however, the steam function on this straightener not only protects your hair - but leaves it incredibly shiny and fabulous.
EXACTLY what I need when the weather has turned my hair into a frizzy mess.
Recent Deliciousness: Our Healthy Single Serve Apple Crisp Recipe. Since it's grain free, gluten free, sugar free and possibly even paleo, this is one dessert recipe just about everyone can enjoy!
Even better? It's seriously delicious and SO easy to make!

Recent Dinners: On Friday night we were babysitting again so we needed something quick and easy for dinner. What did we have for dinner? Our go-to quick and easy dinner; our Healthy Cheesy Tuna Pasta Bake Recipe (and I'll be having it for dinner tonight again as we're helping out with Ignite and need to be there early early!)
On Saturday Night, our Healthy Chicken and Ricotta Lasagna Recipe was back on the menu! I told Jesse we couldn't have them for a while because our Instagram feed pretty much needed a name change to @lasagnapics as we were eating it so often - but it's so good I can't really blame Jesse for asking for it all the time.
On Sunday Night we were colllllllddddddd and needed something warm and delicious - so our Healthy Chicken Parmesan Rice Bake Recipe was a no-brainer! Made with my Nomato Sauce Recipe, of course!
On Monday Night Jesse was working interstate and I got to play the single lady role! Whenever Jesse's away, I eat whatever he doesn't like, so I made up a warm potato salad with cannellini beans, feta, beets and lots of good stuff. I definitely need to share the recipe for that sometime as it was amaaazing!
On Tuesday Night it was, of course, TACO TUESDAY. Jesse had tacos as per usual whilst I switched things up with enchiladas! Basically all our taco fillings rolled inside corn tortillas and then smothered with my Nomato Sauce Recipe and cheese before baking in the oven!
On Wednesday Night I wanted to use up a big ol' pumpkin I'd bought at the farmers market - and so our Healthy Roasted Pumpkin and Feta Quinoa Bowls Recipe was a natural choice! Loaded up with avocado, chicken and lots of fresh herbs too!
Last night I felt like fish and so our Healthy Cheesy Baked Fish Recipe was on the menu! Served up with roasted potatoes and steamed veggies.
