You see, I really suck at stuffing chicken breasts. Chicken cordon bleu may be a classic dish - but it's totally a hit or miss for me. I either succeed with delicious results or fail miserably.
And in the words of my pal Kim "Sweet Brown" Wilkins...
Ain't nobody got time for that.
So what do you do when you love the flavours of chicken cordon bleu but don't want to risk failure?
Why, you take those flavours and turn it into something even more delicious!
And that, my friends, is how this recipe was born! Best of all? It's SO good that it's become a regular in our house - and no one will ever know that you chose the easy route either!
1 serve cooked rice (white, brown or any gluten free grain works!)
~100g chicken breast, sliced
~50g ham, sliced
1 clove garlic, crushed
2 tbsp (40g) reduced fat cream cheese
2 tbsp (30g) plain greek yogurt

Healthy Chicken Cordon Bleu Rice Casserole Recipe
serves one, easily multiplied
low fat, gluten free, high protein, clean eating friendly
~100g chicken breast, sliced
~50g ham, sliced
1 clove garlic, crushed
2 tbsp (40g) reduced fat cream cheese
2 tbsp (30g) plain greek yogurt
1-2 tbsp water or milk
Salt and pepper, to taste
1-2 tbsp parmesan cheese
1-2 tbsp gluten free cracker crumbs

- Preheat your oven to 180C/355F
- Lightly grease a single serve baking dish or medium ramekin and set aside (the baking dish pictured is about 13x13cm/5x5 inches)
- In a small non-stick saucepan over a medium-high heat, cook your chicken and ham with your garlic until lightly golden and cooked through. Add a splash of water or a little bit of oil if needed to stop it from sticking.
- Add in your rice, stirring to combine.
- Turn off the heat and mix through your cream cheese and yogurt, adding 1-2 tbsp of water or milk to allow everything to mix together.
- Season your rice mix to taste and pour into your ramekin/baking dish, topping with your cheese and cracker crumbs.
- Bake for 10-15 minutes or until your cheese is melted and your cracker topping is golden.
- Enjoy immediately!
