But let's reel it back in, I didn't come here to tell you future predictions (sorry to disappoint guys, I'm not turning SIL into a psychic readings blog), I'm here to tell you what's been happening in our world recently!

Recent Laughs: File this under Weird Things My Husband Does.
I'm lucky to be married to a guy that's as silly as I am and who makes me laugh every single day. On Sunday for some reason he decided to hide in this random collapsible bin (I don't even know what it is to be honest - so roll with me here, friends!) and scare poor Trixie as she came back to bring him her ball.
In the second picture you'll see Trixie's pink ball - but what you don't see is poor Trixie FLYING through the air as Jesse scared her silly!
Think Cats vs Cucumbers scared. If our dogs were people they'd probably file a restraining order against Jesse...
Now, file this under Weird Things My Husband Sends Me. Apparently Jesse thought his weird popped chips find was something I needed to see right that very second so this was the picture I got on Tuesday whilst he ate his lunch in the truck.
And yep, my husband eats chips because for some reason, his entire family (and friends... maybe it's a Southern thing?) cannot eat a sandwich without chips. I don't get it but it must be a thing as everyone in Louisiana buys crisps/chips with their Subway sandwiches too? Or is it an American thing?
Recent Achievements: I finished the Wizard of Oz puzzleeeee!!! You might remember when I shared a photo of the "missing puzzle pieces" of this puzzle a few weeks back?
Well, after taking apart the half-put-together puzzle and putting it all back in the box, I found those "missing" pieces when I was cleaning the house the next day. Whilst Jesse wasn't too keen on starting the 2000 piece puzzle all over again, I was on a mission to finish it and so I did exactly that over the weekend.
It was exactly the right way to spend my Saturday as I was feeling like I'd been hit by a truck after being put on antibiotics on Friday.
Recent Google Doctor Win: Why was I on antibiotics? Well, last week I had this weird lump come up under my arm (basically my arm pit) and whilst I thought at first it must have been an ingrown hair (gross I know but that's the only thing I could think of), that lump got bigger and angrier and sorer as the week went on.
I didn't want to go to the doctor and have her tell me it was an ingrown hair (because that's kind of embarrassing I suppose?) so I got to Google Doctor-ing and saw a photo of a swollen gland that looked JUST like my arm.
Mum thought I was crazy because that's not where your glands are but I was adamant that's what it was - and sure enough when I went to the doctor on Friday, that was indeed the problem!
So, kids! Google doctor isn't always wrong. Mystery solved! :P
Recent Discoveries: Custard Apples! Our friends at Australian Custard Apples sent us some custard apples this week and it was our first time every trying them.
I'm pretty sure I've found a new favourite fruit as they're SERIOUSLY delicious - and they even sent us this super cute "eat me" spoon to enjoy them with.
In case you're like me and have no idea how to choose one or how to eat one, you want to look for a fruit that "gives" to gentle pressure (similar to an avocado) as that means it's ripe and ready to eat. When you're ready to eat it, simply cut it in half and scoop out the flesh, discarding the big black seeds!
They're loaded with vitamin C, low GI and filled with potassium - meaning they're a great post workout recovery option too!
On Monday night I wanted something simple for dinner and so grilled chicken and veggies it was! Served up with a side of our Healthy Avocado Quinoa Recipe because it's always delicious!

Funny story; that jacket isn't actually a trendy cropped denim jacket. It's my sister's Minnie Mouse denim jacket from when she was 5 that just so happens to work as a cropped jacket now :P Ha!

Recent Eats: Lots of delicious dinners have been on our dinner table this week, as per usual. On Friday night I experimented and made some homemade sausage rolls. Whilst they certainly need a bit more work before sharing, they were definitely delicious - especially dipped in our Nomato Sauce!
On Saturday night I wasn't feeling well thanks to those antibiotics and thus I decided Chicken Soup was on the menu for dinner! But not just any chicken soup.... my homemade healthy chicken and dumplings soup that I need to share with you ASAP!
Sunday night Jesse wanted Spaghetti and I couldn't say no! I whipped up our Healthy Spaghetti Bolognese Recipe (made with our Ultimate Nomato Sauce Recipe instead of tomatoes for me!) and it was just what we needed!
On Tuesday night I got home late after a longggggggggg day and pretty much inhaled this Healthy Taco Spaghetti Recipe (made with elbows again because girl didn't have any spaghetti) which I'd prepared the night before, knowing I'd be coming home late and hungry!
On Wednesday night I was home late once again and raced the sun to try and get a good photo, however, the sun won and I ended up with a lousy one. Nevertheless, we had our Healthy Sticky Peanut Stir Fry Recipe with chicken and ALL THE VEGGIES and it was delish!
Last night Jesse was on his way home from working up the coast and didn't get in til 8pm so I made our Healthy Tuna Pasta Bake Recipe - my favourite "single lady" meal!
