Fri-yay! We have gotten through the week and we have a long weekend ahead of us! If that's not something to celebrate I don't know what is! ;)
But before we get to the weekend, let me share what's been happening in our world recently! >>
Recent Projects: We've been working on a project we've been meaning to finish for ageeeeeeeeeeees - and it's finally all coming together!
Seriously, all hail the electric sander. I do not want to know how long it would have taken us to sand all of the wood panels by hand as they were preeeettty messy!

Recent Success: I've been on a mission to not leave washing sitting around unfolded for days like I usually do and so far I've been succeeding! BOOM!
Recent Obsession: Veggie loaded sandwiches. This week's favourite combo? Hummus, avocado, alfalfa sprouts, grated carrot, baby spinach, cucumber and beetroot squished between gluten free bread that's always way too small and the rest of the filling eaten straight out of the roll/bread in order to close it :P
Recent Dilemmas: Not being able to find jeans that fit. The last time I found jeans that miraculously fit my slight but long frame, I bought six pairs (and I would have bought more but that's all they had).... the last of those jeans have just died and now I'm on the hunt for new ones but I am not having any luck.
I know cropped jeans are in but my ankles do not want to freeze, people!
Recent Netflixing: Netflix and Nelly is pretty much our ideal weeknight. How can you go wrong with good tv shows and puppy cuddles?!
We've just finished House M.D (all eight seasons) and now we're looking for something new to watch! I suggested Sherlock but then I realised that it's not on Netflix!
Recent Baking: I've been playing around with this upside down caramel banana cake for a while and now I've finally settled on the perfect recipe. I'll have to share it with you next week as it is INCREEEEEEEEEDIBLE! A soft, fluffy banana cake with a top layer of caramel and sliced banana - all made without any refined sugar! BOOM - and I've even come up with a vegan option!
Recent Reader Faves: I love hearing back from you guys when you try our recipes (or even just to say hello!) and this week Elle sent me this photo. She'd made our Healthy Homemade Cream of Chicken Soup Recipe and apparently her husband thought it was that good! ;)
Recent Trixie Tales: This girl has been her silly self as per usual - barking at feathers, towels and everything else that may possibly threaten her existence (but she thinks she's so tough around other dogs) - however, she's also discovered her reflection... in the garbage bin.
She will literally stalk herself in the reflection of the bin only to go up and either lick it or cower away from the big bad reflection :P
Recently Eating: I made up yet another batch of our Healthy Banana Energy Bar Recipe this week and have been enjoying one with a cup of tea just about every day. You've really got to try the recipe! Not only is it healthy and free from any refined or added sugars, it's also gluten free, grain free, vegan, egg free, dairy free and has nut free options too!
Recently Decisions: Kimmy Schmidt Season Two vs My Big Fat Greek Wedding 2. Jesse is going over to a friend's house tonight so that means I get to choose what to watch on TV :P
Usually when Jesse is away or out, I head straight to Netflix to watch a documentary or a show that Jesse doesn't like. Last year when Jesse was working interstate a lot, I was binge watching Kimmy Schmidt and so I am SO excited that season two is out - buttttttttttttttttt, the decision is not that easy.
It's either binge watching Kimmy Schmidt or going to the movies with my mama to see My Big Fat Greek Wedding 2 (if I can convince her!). Choices, choices! ;)
Recent Dinners: Are you sick of seeing our dinner photos yet? I keep contemplating not sharing the really awful looking photos, however, when I have dozens of you emailing/commenting/messaging me that the photo came just as you were asking "what should I cook for dinner" and you were inspired; that's exactly what I wanted for the SIL Dinner Challenge! Soooooo, the photos may be crappy but the inspiration is there?
Nevertheless, here's what's been on our dinner table lately!
On Friday night I made up a big batch of our Healthy Creamy Potato and Leek Soup Recipe (but this time I made a smaller batch, nixing the water and cornstarch).
On Saturday I finally made Jesse his favourite Healthy Roasted Pumpkin and Feta Quinoa Bowls Recipe as he'd been asking for them all week long (we just didn't have the time to roast pumpkin!) and on Sunday I made....... surprise surprise, our "famous" Healthy Chicken and Ricotta Lasagna Recipe because we hadn't had it in a whole week and apparently Jesse was having withdrawals :P
Boy is obsessed with that lasagna.... which is massive for someone that "hates ricotta" and told me "you can't have lasagna without tomatoes". Psh!
On Monday night we had a pretty simple dinner of steak, roasted sweet potatoes and ALLL THE VEGGIES whilst on Tuesday it was, of course, Taco Tuesday/Mexican Martes and we had Beef and Black Bean Quesadillas.
On Wednesday night we had an oldie but a goodie; our Healthy Chicken Parmesan Rice Bake Recipe! I made mine with our Ultimate Nomato Sauce Recipe to keep it tomato-free and Kristy friendly and it was SO so sooooooooo ridiculously good!
On Thursday (also known as last night) we had our Healthy Ham and Cheese Cornbread Bake Recipe because Jesse kept seeing it come up on his Facebook timeline after I shared it on our Facebook page and because, well, you can never go wrong with that recipe.
