Every Tuesday is Mexican Martes (formally Taco Tuesday) in our house.
It doesn't matter if we're sick with the flu, heading out for the night or have people over; at least some form of Mexican-related food must be consumed on Tuesday nights.... as enforced by Jesse.
It's pretty much law in the SIL house. I mean, Jesse feels so strongly about Mexican Martes that he'd even give up pizza for it... and that is saying something!
But me? I'm not so fussed by the whole ordeal. In fact, I'm a little over tacos. Ever since Jesse moved here we've been having Taco Tuesdays and whilst in the past I've always happily participated; lately, I've found myself taking taco ingredients and turning them into something different.
That, my friend, is why I'm sharing this recipe with you. You see, sometimes a girl just cannot face another taco/quesadilla/burrito and craves variety. That is where this pasta comes in.
I still cook up the meat and beans the same way as I do for Jesse, however, instead of loading them into some kind or tortilla related vessel, I take said meat and turn it into something delicious. Taco Spaghetti!
It's quick, it's easy, it's healthy and it's oh so delicious. So delicious, in fact, that it's even convinced Jesse to sway from the usual tacos every now and again.
So let me share the recipe with you! >>
Healthy Taco Spaghetti Recipe
low fat, gluten free, clean eating friendly, tomato free/nightshade free option
serves 1, easily multiplied to serve a crowd
1 serve of your favourite pasta, cooked (I used Barilla GF Spaghetti)
1 serve taco meat (*see notes)
2-3 tbsp nomato sauce or crushed canned tomatoes
2-3 tbsp plain greek yogurt
Grated cheese, to top
Diced avocado, to top
Diced avocado, to top
A dollop of greek yogurt, to top
Finely chopped coriander/cilantro or parsley, to garnish
- In a small saucepan, add your meat and nomato sauce and heat over a medium heat until heated through. Add in your pasta, allowing to heat through.
- Remove your pot from the heat and add in your greek yogurt, stirring to combine all of the ingredients (you don't want to do this over the heat or your yogurt may curdle!).
- Place your pasta onto your serving dish and top with your cheese, avocado, yogurt and herbs and enjoy immediately!
Notes:
*Since I can't eat regular taco seasonings, I cook up lean beef mince with black beans and a heap of seasonings to taste. I generally use paprika, cumin, onion powder, garlic powder, oregano and salt and pepper and then add a little chilli powder for Jesse. You can just use your favourite taco seasoning or whatever you usually put in your meat for tacos (this also works with sliced chicken breast!)
**Instead of greek yogurt you can use sour cream, however, there isn't much of a difference in taste!
