Phew! What. A. Week.
This week I feel like I've covered a million kilometres, done a thousand things and somehow I'm still on my feet! Whilst I am so thankful for the busy-ness of it all, I am also SO looking forward to the weekend as I am in serious need of some rest before another busy week next week!
But, nevertheless, let's have a peek at our week! >>
Recent Relaxation: Let's start with the opposite of what my week was, ha! On Friday afternoon I took some time off work to enjoy a massage with my mama! I had bought us both vouchers for Christmas at a thai massage place and it was so what we needed.
The hour and a half of relaxation was perfect... though... that's about all the relaxation we got from there.
Recent Drama: You see, on Friday afternoon after we'd had our relaxing massages; my Dad ended up in hospital! A few months ago he had a really bad fall which left him with horrible bruises. Those bruises then caused a blood infection and he's been battling it ever since. After what seemed like endless rounds of antibiotics, the infection was still there and we FINALLY convinced him to go back to the hospital to have it looked at.
After an emergency surgery on Friday night, he was in hospital for the rest of the weekend and only got out early this week with strict bed rest orders!
He's still hobbling about (and driving us crazy as he's going stir crazy!) but feeling much better!
Recent Eats: We've been sharing our dinners all weeks on Instagram (as I know so many of you have been asking me for MONTHS - I finally got around to actually doing it :P) and we've been eating some deeelicious things.
Last night (above) was lamb steaks with ALLLLLLLLL THE VEGGIES because;
a) I have an obsession with sweet potatoes roasted in the skin at the moment
b) we can never get enough corn (even if it is all zig zaggedy and weird looking)
c) I never learnt the whole moderation thing when it came to vegetables.
On Wednesday night we had quinoa with a creamy chicken and mushroom sauce which Jesse has told me I need to make again ASAP so I can share the recipe with you. This was served up with a bunch of steamed veggies because I can't get enough of those either.
On Tuesday night is was TACO TUESDAY! Though, lately it's been known as Mexican Martes (Mexican Tuesday) in our house as we haven't been having tacos. This week was quesadillas filled with beef and black beans, topped with the most delicious guacamole (just seasonings, avocado and plain chobani!)
On Monday we had our Healthy Creamy Chicken and Mushroom Pasta Recipe with the addition of fresh basil for me, served up with more steamed veggies :P (I'm keeping green bean, carrot, zucchini and broccoli farmers in jobs all over the country at the moment).
On Sunday night we had our favourite Healthy Cheesy Baked Fish Recipe with corn, roasted sweet potatoes (what did I tell you about the corn + sweet potato obsession) and more steamed veggies :P
On Saturday night I let the Cuisine Companion do the cooking and we had our Healthy Boscaiola Risotto Recipe with (don't even really need to say it) steamed veggies.
And on Friday night the Cuisine Companion did the cooking as well as we had our Healthy Creamy Chicken and Rice Soup Recipe with extra carrots and steamed green beans added in.
Recent Fun: Over the weekend we busted out the ol' Scrabble board and versed Katrina and Brandon in a game. Brandon got lucky and just beat me with Jesse coming in third and poor Katrina dragging waaaay behind the rest of us.
Jesse and I missed out on our favourite scrabble letter of all time (the Q!) and were pretty bummed we couldn't steal the winning spot with the easiest high scoring word.
In case you're a scrabble fan, always try and put an i next to a triple letter/word tile. Why? Because if you place a Q on that tile and make Qi (the Chinese Medicine term for energy - it's in the scrabble dictionary too!) you'll get around 33 points for a teeny tiny two letter word :P
Recent Realisations: Realisation number one - I've drank tea/coffee in 9 different cafes/offices in the last week.
Realisation number two - I'm really judgemental when it comes to tea/coffee and have a mental ranking of the best cafes in Sydney based on their tea/coffee. There's nothing worse than a bad cup of tea! (especially when you like black/herbal tea!)
Also, I learnt a new term this week; coffice. As in a cafe that you use as an office :P
Realisation number two - I'm really judgemental when it comes to tea/coffee and have a mental ranking of the best cafes in Sydney based on their tea/coffee. There's nothing worse than a bad cup of tea! (especially when you like black/herbal tea!)

All of our dinners this week were too delicious to choose a favourite from! When I'm at a cafe, there's usually three or four things I'll choose; black english breakfast tea (or black vanilla/chai tea), peppermint tea, a full fat latte or an almond milk latte. Generally when I have a lot of meetings in a day, i'll alternate between different cups of tea as I find coffee + multiple meetings + racing around leaves me feeling jittery!
