Hello there! The weekend is almost here and whilst we've had a busy week, our weekend is looking to be even busier! Here's a quick look at what's been happening in the Southern In-Law world this week!
Recent Puppy Love: Trixie has been my little buddy this week and has followed me around everywhere!
Poor little poppet had a sore paw earlier in the week as she managed to split one of the nails on her front feet (probably because she runs around like a lunatic all day err'day) but once we took her to the vet and got her some medicine she was back to her normal self.
The photo on the right is scaredy cat Trixie who was afraid of the wind and insisted on being held whilst she cowered away :P

Recent Craziness: Over the weekend we took our garden from the left to the right. Down the side of our house we had a really overgrown bougainvillea tree/plant/evil spiky thing which really needed to be torn up and we'd been putting it off for ages - until Saturday morning rolled around and we went into full on makeover mode!
We ended up having so much stuff to clear that we hired a mulcher (is that what you call those things?!) so Jesse also cut down some dead branches off our gumtree whilst he was at it so those could be taken away too.
Once all the hard work was done, my Dad got out his new toy and looked a little like an extra from Ghostbusters! His new leaf blower is a noisy petrol motored thing that is actually a backpack and he looked just like he was ready to suck up some earthbound souls haha!
Recent Laughs: Okay so this is kind of really gross. But I was quite amused at these fish heads with their tongues poking out at the grocery store the other day. I texted a photo to Jesse who was TOTALLY grossed out when he opened his phone and saw them! I'm a terrible person, I know!
We also took my Mum and Dad out last night to the Comedy Store to see a comedy showcase which was pretty funny too! The best thing about showcases is that there are so many different acts that even if one really isn't funny, you know you'll be moving onto the next one soon :P
We were really just there to see Al Del Bene who is hilarious.
Recent Eats: Of course this week we launched our #SILDinnerChallenge so we have plenty of delicious dinners to share with you! If you follow us on Instagram (@southerninlaw) or Facebook, chances are you've already seen them - but here's a quick recap on what we've been enjoying!
Above was some Cheesy Fish Bites that we were testing out and they were soooooooooooo delicious that I need to share the recipe with you ASAP!
Taco Tuesday/Mexican Martes this week was Beef and Black Bean Quesadillas once again, served up with salsa (for Jesse - not this tomato intolerant gal) and chobani for dipping because avocados have been stupidly expensive!
Over the weekend we had Homemade Gluten Free Pita Breads with Grilled Chicken, Veggies and our favourite Healthy Garlic and Herb Yogurt Dip. I definitely need to share the pita bread recipe with you soon as they're soft, fluffy and SO easy to make! Even for this dough-hating gal!
On Saturday night we wanted something simple but delicious so Healthy Cheesy Tuna Pasta Bakes it was! I added in peas for something different - and because, well, we had them in the freezer!
Friday night was lamb steaks with ALL THE VEGGIES - and funnily enough, what you don't see most nights is the pile of veggies on my plate. That's because this girl is weird about food touching and would much rather have two plates than cram it all onto one... because... well... I never learnt moderation when it comes to vegetables and girl eats A LOTTTAAAA veggies.
This week's eats also had a bit of a Southern flair as I made Jambalaya! I feel like every Southern cook's jambalaya is different, however, this is based off Jesse's Nanny's recipe and was one of the first Southern dishes I mastered! Jesse likes it even better than his Nanny's, however, we never told her that!
Last night we had Pork Fillets with a Creamy Dijon Sauce, served up with roasted potatoes and steamed vegetables!

Recent Relaxing: Casual scrabble games with my husband - though, the last game of scrabble we played was slowwwwwwwwwwwwwwwwwwwwww as Jesse didn't have the best tiles. I'm thinking we need one of those chess clocks to fasten things up. You know those ones you hit each time you have your turn?
Recent Journaling: In addition to my usual journaling/bible studies (I'll have to tell you about a new one Jesse and I are doing next week!), I've been going through The Happiness at Work Program and I am loving it! Set up as a journal style book, the Happiness at Work Program is designed to help you to be more engaged, creative and resilient with daily journal prompts to improve your personal happiness and wellbeing.
It's designed with organisations in mind, however, as a business owner I've found it really works for me too! I've you're in HR or are looking for a way to motivate your team (or just feel like you need to be more motivated at work!), I would definitely recommend looking into it!
Recent Deliciousness: NOSHU Donuts and tea, however, I ate my last donut this morning and now I think I'm going to suffer from withdrawals. They are seriously ridiculously amazing creations, friends.
