Helllooooo lovely! This week feels all sorts of odd for me as we had a public holiday in almost the middle of the week! After taking Tuesday off I've been thinking Wednesday was Monday and Monday was Sunday.
But nevertheless, I've got lots of goodness to share with you today! >>
Recent Fun: This time last week SIL Mama and I were on our way to Stockland Wetherill Park for the launch of their A to Z of Mmmm initiative with Miguel Maestre! This is a new series Stockland will be launching on February first which will feature lots of fun videos and delicious recipes by Miguel!
Whilst there wasn't anything for this coeliac allergic to everything girl (but I never expect anyone to cater for me and don't ask them to!), I am currently talking to Stockland about whether or not they're planning to provide recipes to suit those with allergies as part of this series - or what we can do to help in that department! I'll keep you updated as I hear from them!
The lunch Miguel cooked was thoroughly enjoyed by everyone else at the table, though! In fact, my mama enjoyed some of the dishes so much we went straight to the grocery store on our way home to pick up the ingredients!

On the menu for the day was Kingfish Ceviche, Lamb Kofta with Beetroot Pita (this is what Mum remade after the event!), Chorizo Stuffed Chicken with a White Bean Salad and Baba Ganoush and Tomato Caprese with Fresh Mozzarella.
Recently Watching: House. After years of trying to convince Jesse to watch House, he finally gave in after we finished United States of Tara (yes, friends - our weeknights are spent binge watching television shows and we have no shame :P) and he's been loving it!
We're up to the end of season two and whilst he's freaked out every time they drill into someone's head, he is totally into it :P It's also interesting when they diagnose patients with conditions either I or my sister have - or ones doctors have tested us for. Last night one patient had Wegener's Granulomatosis (what my sister has) and another two had coeliac disease!
Recently Gardening: We have baby veggies, friends! Last week I showed you our disaster of a veggie patch (that didn't like having my parents "care" for it whilst we were away) but this week I show you our new growth!
You see, past Kristy had the idea to sow some new seeds before leaving for New Zealand and it turns out that was a brilliant idea. We've got some corn growing away at the back and iceberg lettuce popping up at the front!
Recently Eats: We've been eating some delicious dinners this week! Here's what's been on our dinner table since I last shared!
- Friday; Beef Stir Fry with Rice and ALL THE VEGGIES!
- Saturday; Our Favourite Healthy Cheesy Baked Fish Recipe
- Sunday; Chicken Breasts Stuffed with Camembert Cheese served up with Steamed Veggies and Roasted Potatoes
- Monday; Homemade Healthy Gluten Free Sausage Rolls (I'll have to share the recipe for this as Jesse loved them - and whilst they weren't perfectly perfect, I loved them too!)
- Tuesday; I didn't realise it was Tuesday so we had Asian Style Honey Meatballs with Veggies and Rice
- Wednesday; Homemade Healthy Gluten Free Chicken Pot Pies (I'll have to share the recipe for this too - again, the pastry wasn't perfect, however, Jesse told me I can't change a thing as they're SO good!)
- Thursday; Healthy Turkey Meatloaf with Veggies and Corn
- Tonight; Tonight Jesse's asked for our favourite Healthy Creamy Chicken and Rice Soup. It's not really the weather for it (it's really hot!), however, that's what he wanted so that's what's on the menu!
Recent Reads: I'm currently reading "The Book of God; The Bible as a Novel" and so far so good! The way that Walter has written it is incredible - it really does make you feel like you're right there within the story - and gives you a totally different perspective than what you get just reading the bible!
I don't know if it will measure up to A Lineage of Grace (one of my all time favourite books which tells the story of the women in Jesus' family) but it's pretty good so far!
Recent Toys: Jesse has a new toy; an Alcatel One Touch Tablet. I have an iPad, however, Jesse's always used his phone until we got the tablet last week - and now he's totally converted :P
He has a Samsung Galaxy so the Android operating system is like second nature and he's been using it daily. He was extra impressed when he realised he could transfer all his silly little android games onto the tablet by connecting his google account - so now he plays his fallout shelter whatever game on there too :P
