Recipe: Our Favourite Cheesy Baked Fish (Gluten Free & Low Fat)

This Healthy Cheesy Baked Fish Recipe is a favourite in our house. It's something we eat for dinner at least once a week, however, for a long time this recipe held a secret... 

You see, Jesse hates greek yogurt. Well... he thinks he does. If you tell him anything has greek yogurt in it, he won't try it. What he doesn't realise, though, is that most of his favourite foods have greek yogurt in them. 

The guacamole he has every Taco Tuesday, banana bread, his favourite brownies, mixed into pasta sauces or even stirred through his favourite soup.... and it's in this dish too. 

When he first tried this fish, I wondered if he'd notice that the sauce topping had greek yogurt in it - but just like all of his other favourite foods, he was oblivious.

In fact, he had no idea that this recipe had any ounce of greek yogurt in it until I was sharing the recipe with a friend. 

"Hold up! You put WHAT in the cheesy fish?" he asked
"Greek yogurt... it's in the sauce" I replied
"But it tastes so good?!"

Yes husband, it does taste so good. He's since forgiven me for sneaking greek yogurt into this dish because it really is so good. It's one we never tire of - and the first thing we wanted when we got back home from New Zealand!

You can serve it up with salad or steamed veggies, rice or roasted potatoes - whatever your heart desires!

But let me share the recipe with you so it can become a favourite in your house too! >> 

Our Favourite Healthy Cheesy Baked Fish Recipe - low fat, gluten free, high protein, healthy, egg free, clean eating, healthy dinner recipes, greek yogurt

Healthy Cheesy Baked Fish Recipe serves 1, easily multiplied*
low fat, gluten free, high protein, clean eating friendly, egg free, low carb

1 fish** fillet, fresh or frozen (we find the best fish for this recipe is a white flaky fish like hoki,f flathead, basa or whiting - we always use frozen fish as we buy fresh frozen fish in bulk and keep it in the freezer)
2 tsp (~10g) mayonnaise 
2 tbsp (40g) plain greek yogurt 
Garlic salt, to taste 
Optional: fresh basil and parsley, finely chopped (I also like to add oregano!)
~2 tbsp mozzarella cheese (enough to cover the fish!) 
  • Preheat your oven to 180C/355F
  • Place your fish fillet(s) onto a baking tray lined with baking paper. 
  • In a small bowl, combine your mayonnaise, yogurt, garlic salt and herbs (if using). 
  • Spread your sauce mixture over the top of your fish, smoothing it out to ensure all of the fish is covered. 
  • Sprinkle over your mozzarella, covering the top of the fish fillet.
  • Bake for 20-30 minutes or until your fish is cooked through and your cheese is melted and golden (cooking times will vary depending on the thickness of your fish!).
  • Serve immediately with sides of your choice!
Notes:
*You'll notice I've put the ingredients for a single serving here - that's because it's so easy to multiply and I know that many SIL readers out there are only cooking for one!
**You can also make this recipe with chicken breast if you prefer! Just adjust the cooking time to suit.
