I love fish - but if you had have asked me if I liked fish this time last year, I would have turned my nose up. You see, as a kid I hated fish - and the only fish I'd really tried was fish fingers. 

My Mum isn't a fish fan so she never cooked it - and as she had too many bad experiences with her own parents force feeding her food she didn't like, she never pushed Katrina or I to try anything we weren't interested in. 

For years I thought fish was disgusting - until I realised I'd never really tried it... and my tastes had definitely changed since I was a kid. When I was first diagnosed with coeliac disease, my allergy specialist and gastroenterologist told me trying fish and seafood wasn't a good idea as I had so many other allergies, however, now that I'm a bit further down the track - I decided last year that I would try fish... 

And I fell in love!

These days I could eat fish every single day, twice a day without a complaint - and it's all because of delicious recipes like this one! 

This recipe is one I came up with on a whim. I'd been shooting product photos all day for a client using lots of different nuts as props and the macadamias had caught my eye. I reaaaaaaaaally wanted fish for dinner - but I'd been starring and drooling over macadamia nuts all day - so I combined the two and came up with a recipe we've been making ever since!

So let me share the recipe with you so you can make it yourself! >> 


Healthy Macadamia Crusted Fish Recipe - baked fish recipes, healthy, low fat, low carb, gluten free, healthy dinner recipes

Healthy Macadamia Crusted Baked Fish Recipe 
serves 2, easily multiplied/divided 
low fat, gluten free, low carb, clean eating friendly 

2 fish fillets, fresh or frozen (we like white fish best for this recipe, however, you can use any fish you like - or even chicken breast fillets!) 
2 tsp (10g) flour 
1/4 cup (30g) natural macadamia nuts
1 1/2 tbsp (20g) gluten free bread crumbs 
2 tsp (10g) butter or margarine/dairy free spread, softened
Salt and pepper or seasonings to taste
1-2 tsp boiling water
  • Preheat oven to 200C/390F 
  • Place your fish fillets onto a baking tray, lined with baking paper and bake for 5-10 minutes, or until your fish begins to cook and turns white (frozen fish will take longer). 
  • Whilst your fish is cooking, prepare your crumb by crushing your macadamia nuts in a food processor or blender (simply pulse to crush your macadamias into small pieces)
  • Add your flour, breadcrumbs and salt and pepper.
  • Add your butter and boiling water, mixing to combine your crumb. 
  • You want the crumb to be mixed through and whilst crumbly, held together enough to press it onto your fish. 
  • Press your crumb onto your fish fillets and place your fish back into the oven, baking for 5-10 minutes or until your crumb is golden and crunchy and your fish is cooked through. 
  • Serve immediately with a salad, steamed veggies or whatever you fancy! 
Note: Cooking times will vary depending on the thickness of your fish fillets!
