There's always some kind of protein packed snack hanging out in a container on our kitchen bench. Why? Because both Jesse and I almost always busy and always in need of quick on-the-go snacks to take to work or to grab on the go and I'm always looking to add in extra protein to my diet.

But whilst we always have some kind of protein packed snack around, it's never the same thing. Variety is the spice of life and I love nothing more than trying out new recipes (and Jesse will happily be the taste tester for said recipes) so what you'll find in that container varies from week to week. 

Whether it's our favourite protein brownies or a protein muffin recipe - or protein cookies like the recipe I'm going to share with you today!

These cookies actually came about after a conversation with some friends about Subway's Chocolate White Chocolate Chip Cookies. The thought of them stuck in my head and when it came time to whip up a new bunch of snacks, I only had cookies on my mind. 

I decided protein cookies should certainly be a thing and we've been making these babies ever since! They're a little bit different than other cookies as they're quite soft in the middle , however, the edges are firm and the bursts of white chocolate chips are totally heavenly. 

Each cookie packs in around 8 grams of protein, depending on which protein powder you choose to use, and they're all sorts of delicious. 

So let me share the recipe with you! >> 


Gluten Free Double Chocolate Protein Cookies Recipe | low fat, gluten free, high protein, clean eating friendly, lower sugar, refined sugar free, low carb
 

Healthy Double Chocolate Protein Cookies makes 7 large cookies 
low fat, gluten free, high protein, lower carb, refined sugar free

2 tbsp (15g) protein powder *see notes
2/3 cup (80g) gluten free oat flour (ground from gluten free oats)**
1 1/2 tbsp (10g) unsweetened cocoa powder
1/4 cup (50g) coconut sugar or brown sugar
1/2 tsp baking powder 
3 tbsp (45g) butter, melted 
2 egg whites (60g/1/4 cup) 
White chocolate chips or mix ins of your choice (about 1/4 cup) 
  • Preheat your oven to 180C/350F
  • Grease and/or line one cookie sheet and set aside
  • In a bowl, combine all of your ingredients, mixing until a soft dough forms and all ingredients are combined. 
  • Roll your cookie mixture into balls about a heaped tablespoon in size (if dough is too sticky, either use wet hands or spoons) and then flatten onto your baking sheet about 1/2 inch in thickness. 
  • Bake your cookies for 7-10 minutes, or until the edges are set and firm (they will firm up on cooling, however, bake them for about 12-14 minutes if you'd like crunchier cookies).
  • Allow to cool slightly before devouring! 
  • Once cool, store in an airtight container at room temperature for 3-4 days.

Notes:
*I recommend brown rice protein powder or whey protein powder for the best results in baking, however, you can try using your favourite protein powder (as long as it's not a meal replacement protein shake mix as those won't work). Our favourite is this unflavoured brown rice protein powder. Check to make sure your protein powder is gluten free if you want gluten free cookies! 
**If you can't tolerate or don't like oats, feel free to substitute 2/3 cup either gluten free or plain flour. Find out more about oats on a gluten free diet.

If you don't have/like protein powder, feel free to use our beloved peanut flour instead!
