6 Sentence Sunday: 8th February 2015

I've been home alone all weekend (well, with the pups) and whilst I've loved the peace and quiet I am definitely looking forward to having Mum and Katrina come home today and Jesse get back tomorrow so I can have some company!

I've been loving on microwave breakfast bakes/protein mug cakes (see this morning's deliciousness above) this week and I have officially perfected my recipes so I cannot wait to share them with you soon!

But as well as perfecting my protein breakfast bakes - I've also come up with the perfect way to use up those leftover egg yolks with this delicious custard oatmeal so I'll have to share the recipe for that soon as well!

Our little youth group started back for this year on Friday and I was so happy to see my girls come back for a new year of fun - and I'm so excited for what God has in store for them this year!

Blogger Gift Ideas - Unique Blogger T-Shirt

You may not know this (as I don't want to plaster it all over the blog and annoy you!) but we have a little Cafepress store with lots of awesome designs - and I was so happy to see the lovely Brandie from The Country Cook loving my favourite blogger design - this Shoot Eat Blog Tshirt for Bloggers!

Valentines Day is fast approaching and I'd love to know are there any treats you'd like to see healthified or lightened up on the blog?! I'll get to work on as many requests as I can!

But tell me, how has your weekend been?
And are you someone who prefers to be alone or have company?
I definitely like to have people around me - I always find being alone really boring and odd and usually just end up reading book after book :P

  2. Hi Vicky,
No I wouldn't use white chocolate as it would completely change the brownies, however, you could add in some white chocolate chips/chunks if you like!

  8. for the bar of dark chocolate, would it be ok to use bakers unsweetened chocolate or did you use something else? this looks delicious

  9. Hi Maggie, we usually use Lindt 70% or 80% dark chocolate, however, you can definitely use unsweetened bakers chocolate - just add a little extra sugar if you like things on the sweeter side.

  10. Can I use coconut palm sugar instead of sugar?

    ReplyDelete
  11. You most certainly can! Some people find coconut sugar not quite as sweet as regular sugar so you may want to use more, however, I personally use it as a direct alternative.

  12. Great! I don't like things too sweet so that's good to know. I think I'll try with 1/4 cup to begin with :)

  13. I can't eat eggs. Do you think that the flaxseed/chia seed replacement would work in these?

  14. Hi Natalie, to be entirely honest I have no idea as I've never tried making a flourless recipe without eggs. You could give it a try however i don't know how successful it would be as the eggs are really what bring this recipe together.

  16. Hi, I have replaced 1/4 cup apple sauce for eggs in cookies. I've also heard you can use 1/2 of a ripe banana. Hope this helps.

  17. When my daughter was a baby, avocado was her favorite food. She couldn't get enough, until one day she just decided she didn't want anymore. Now at 4, I bought an avocado for her to try again. One bite & she declared she DID NOT like it (neither my husband nor I like them either), so I was left with almost an entire avocado.

All this to say, thanks for an amazingly delicious recipe! You'd never know the avocado was in there. I made a few changes based on what I had on hand. I had 128 grams of avocado, so I supplemented with 1/2 cup plain yogurt. I used bittersweet chocolate chips (Godiva 60%, 80 g) with a little semisweet mixed in (Nestle, 20 g) since I don't like really dark chocolate. And I used the 1/2 cup sugar. I cut it into 16 very rich brownies, at 83 calories each.

  19. I'm not sure what I did wrong...they came out really dry and almost bitter! When I put them in the pan it was so thick that it seemed like it needed more liquid. Any suggestions where I went wrong? I was really looking forward to these!

    ReplyDelete
  20. Hey Stephanie,
What size pan did you use? As it says in the recipe, if your batter does look too thick you should definitely add more liquid (1 tbsp at a time) as the results will vary depending on your cocoa powder/chocolate etc.

If you're used to sweeter baked goods, I'd suggest using the increased sugar amount as that will give you sweeter brownies.

  21. I used 8x8, but I didn't add additional liquid. I'll try again later this week when I have everything again. Out of chocolate and avocados at this point. Thanks for the quick reply and I'll let you know how the next batch works out.

  22. These came out great for me but I added around 8 to 10 tbsp of extra water. The one thing I didn't like about these was how bitter they turned out. I used 72% dark chocolate and they came out strong! I happen to like 85% dark chocolate and these were potent. Mind you, I tried one directly out of the oven with ice cream and one at room temperature. The cooled one was better. I'll try a chilled one tomorrow. I used zero calorie sweetener instead of sugar and I think they turned out how they would have, but next time I'll definitely add maybe a few tbsp of honey.

  23. HI Amanda,
You probably found these brownies bitter due to the reduced sugar. If you're used to sweeter baked goods, I'd definitely add more sugar, as the recipe states.

Though, just reading that you did use artifical sweetener, that may have been the issue rather than the reduced sugar as artificial sweeteners (even more "natural" versions like stevia) do tend to have a bitter aftertaste.

  24. About how many calories is it per brownie? If you have a rough estimate that would be great!

    ReplyDelete
  25. Hi Katie, I'm not 100% sure to be honest, however, I know many readers have pinned the recipe saying each brownie worked out to be under 100 calories. You can use an app like MyFitnessPal to work out the exact calories using the ingredients you choose to use! :)

  26. Instead of the sugar, would it be possible to use a ripened banana instead?

    ReplyDelete
  27. I've done with a banana and for my husband's birthday with a food-processed apple, but you still need a little stevia or even honey or agave nectar or my personal favorite, coconut sugar.

    ReplyDelete
  28. or add simple syrup at the end if you still want to try to salvage them.

    ReplyDelete
  29. Hi Shelby, if you use a banana as a substitute for sugar your brownies will be a different texture (and of course have a banana flavour as well). We regularly use both coconut sugar and honey/maple syrup, however, I wouldn't recommend using banana.
