We eat so many eggs. Little miss likes soft boiled chopped up in a cup and I live dipping chips into yolks of fried eggs. We also bake a lot.

ReplyDeleteAll my quiches are of course eggscellent :-) Especially my bacon and zucchini bake topped with slices of hard boiled egg and sprinkled with cheese (which melts) and paprika. Yum!

My egg cooking skills are eggsellent! I can boil, poach, scramble, omelette, frittata, quiche and more, but my favourite way to do eggs is coddle them. With my beautiful egg coddlers I can create magic, but my favourite is with a strong flavoured cheese, parsley, tabasco sauce, ground pepper and slivers of ham. I serve them with sliced avocado and cherry tomatoes. Yum!

ReplyDeleteI am probably one of the least enthusiastic of cooks but I have found an eggcellent cake recipe that in fact doesn't need eggs. Yes I hear a groan but it is the Wacky Cake that I've heard so much about. Mixing all the dry ingredients, making three wells, adding the wet ingredients and baking it. And all gluten free as well. There's not much else you can do to improve this one. So light, fluffy and totally eggstravagent. A bit of chocolate icing, cream on the side, or if you're feeling adventurous (which is rarely the case for me) you could serve it with a raspberry coulee.
ReplyDeleteAh, but to make this a true eggstravaganza add a dash of fine wine, a teaspoon of great company and a sprinkle of nice quality dinnerware. But don't forget the candles and eggcellent coffee to finish off.
