Recent Things: Veggie Patches, Date Nights and Our Wedding Anniversary!

Recent Things in the Southern In-Law World

Why hello, lovely ones! I am so so glad that it's time for the weekend as this week has been all sorts of craaaaaaaaaaaaaaaaaaaaaaaaaa-zay

But the craziness didn't come as a suprise as it was a short week (Monday was a public holiday), we had a lot planned and Jesse went away for work - but let me tell you what we got up to!

Jesse making silly faces

Recent Annoyance (for Jesse): His wife taking photos of him ALL THE TIME ;P Heh...

Recent Annoyance (for Me): We watched the first episode of season 10 of Supernatural last night and I swear it only went for 2 minutes because it was so so so so good - and now we have to wait a whole week for the next episode (no binge watching!)

Building our Veggie Patch from The Reject Shop

Building our Veggie Patch from The Reject ShopRecent Fun: On the weekend, we built our own veggie patch!

It took a wholeeeeee lot of hard work and in the end we were exhausted - but it was so worth it!

I'll be sharing a whole post about it soon but we've got two little veggie planters with carrots, cucumber, eggplant, zucchini, beetroot and corn... but the best news?

Building our Veggie Patch from The Reject Shop

Recent Joy: Our garden is growing!! I'm remembering to water it and the little seedlings are popping up left right and centre!

Birds Nest

Recent Discovery: A bird's nest that wasn't in my hair! :P Jesse spotted this on the weekend whilst we were putting together our veggie patch - birds are seriously clever when it comes to making nests!

Healthy Prawn Spaghetti  Healthy Roasted Eggplant and Zucchini Spaghetti

Recent Dinner Faves: On the left; Jesse's prawn spaghetti - and on the right; our favourite eggplant and zucchini spaghetti! So so so yum!

Spring Sunshine in Oatley Park

Recent Happiness: Morning walks in the sunshine... I soooooo love Spring!

Shoot Eat Blog Plate - Blogger Gift Ideas

Recent Purchase: This Shoot Eat Blog Plate which I'm currently obsessed with - my life on a plate, friends.

Recent Clothing Must: Maxi Skirts! I am obsessed - I want ALLLLLLLLLL THE MAXI SKIRTS AND MAXI DRESSES and I cannot stop buying them. Want want want, love love love!

At Home Date Night - Dinner by Candlelight  At Home Date Night - Hot Chocolate and Movies in Bed

Recent Obsession: Candles, at home date nights, hot chocolate and eating outside on our patio. All the things that put a smile on my face! We were planning on going out for a date night last Friday but I was exhausted after a long week so Jesse decided we needed to have a date night at home!

Deeeeeeeeeeeeeelicious pasta by candlelight (pre-daylight savings) for dinner and hot chocolates and homemade pumpkin bread for dessert in bed whilst watching Dr Who.  I can't get enough of eating dinner outside now that the weather is so nice!

Blood Test Woes

Recent Ouch: Blood tests. I've got a check up with my haematologist next week to see if I need another iron infusion (let's hope not!) so I had to have a blood test yesterday. The lady taking my blood decided not to listen when I told her the way she was trying to take my blood wouldn't work (as I've had many blood tests) and then proceeded to stab me three times and make me black out and she didn't listen to my requests to lie down rather than sit up (as I have really dodgy blood pressure levels when getting blood tests - one second I'm fine, next second I'm on the floor ;P)

Orgran's New Gluten Free Multigrain Flour Mixes

Recent Excitement: Our lovely friends at Orgran sent us over a package filled with their brand new Multigrain flours! We are so excited to try these out because we loveeeeeeeeeeeeeee Orgran and I can only imagine that these flours will be brilliant! Stay tuned!

Our First Wedding Anniversary!

Recent Things to Look Forward To: Our anniversary!!! Can you believe we've been married for a year on Sunday? I certainly can't! This weekend we're taking the weekend off and enjoying a little trip to the national park to either go canoeing or to hire some water bikes and have a picnic! I can't wait!

But tell me, how has your week been?
What's the best thing you've eaten this week?
What's the best thing you've bought lately?
And do you have any gardening tips for us?

  1. Happy Anniversary to you and your husband! Ugh, I always have the roughest times with giving blood as well. I have tiny veins and they generally have to use the baby needles. I feel for you! Also, I NEED that plate. So cute. :)

  2. Thank you, lovely!

The baby needles make things so much easier but most of the time they never agree to using them on me (unless I get someone who's really nice and realise that I bruise like crazy!). I'm lucky that I have good veins - but only on one arm.

  3. And that plate is my current favourite - it's used at least twice a day and I'll wash it just because I only want to use that plate haha

  4. Do you have recipes posted for the 3 pasta dishes you've mentioned in this post? I'm having a carb craving!

  9. I added 1 egg to the mixture, made enough for 2 rammies and turned out perfect!!

  10. Such great tips! Definitely using these for inspiration for our new home!

  12. I made it with mashed banana instead of apple sauce, still so good! Hard to believe it could even work, but it was delicious! Thank you :3

  13. Hey Natalie, I am so glad you loved it! We've been using banana too lately (as we had an excess of bananas) and it's brilliant! xx

Any idea on the nutritional information? <3

  17. Hi Danielle,
I'm not entirely certain as I haven't calculated it but I've just checked pinterest and a number of pinners are saying they calculated it at around 120-130 calories. Hope that helps! xx

  18. Love it and will be adding it to a healthy dessert post that I will share in the coming weeks. over at marriedandhungryblog.blogspot.com

  20. I must be doing something wrong. my first one overflowed the cup. My second one would not get unsticky no matter how long I cooked it. And it tasted like unsweetened dark chocolate. I do not like dark chocolate. I had to throw it away I couldn't take it. Not sure what I'm doing but its not working. :(

  21. Didn't turn out in oven either. I followed recipe exactly

    ReplyDelete
  22. HI Christine,
What sized cup are you using and how much maple syrup did you use in your version?

This is quite dark tasting, as it does say in the recipe, however, one alternative is to replace 1-2 tbsp of cocoa with plain flour which will give you a just lightly chocolatey taste.

    ReplyDelete
  23. Tastes like crap. Tried oven and microwave. Don't waste your time or the maple syrup.

    ReplyDelete
  24. Hi Rob, I'm sorry to hear you didn't like the recipe. We have hundreds of readers around the globe who have tried and loved this recipe, however, not every recipe will suit everyone.

    ReplyDelete
  25. Hi. I just tried this and the chocolate flavor was really dark, but I liked it! I was just wondering, though, what is the texture supposed to be like, because mine stayed kind of like applesauce (except for the top). It is supposed to be that texture, or should I have cooked it longer?

    ReplyDelete
  26. Hi Ashleyanne, you may have needed to cook it a little longer as it does firm up, however, the inside will be a little gooey. Stay tuned though because we're just about to launch our Microwave eBook with a whole heap of single serve brownies and chocolate cakes as well as a bunch of other goodies! xx

  27. Not at all like a brownie. Stays the consisteny same when you mix it after you "cook" it . It just warms it up. The flavor is really strange too. Chocolate apple.

    ReplyDelete
  28. This did not turn out well for me either. Just sticky and mushy, never firmed up at all and basically just tasted like wet cocoa powder.

    ReplyDelete
  29. Its awful! Mine burnt in the microwave, never firmed up, and tasted like plain cocoa powder! DONT TRY THIS RECIPE!!

  30. Thanks so much for this recipe!!! I am on weight watchers and this recipe is very low on points. I love dark chocolate and I made this recipe but used 1 TB sugar instead of the maple syrup and added an egg. It came out cake-like but needed just a hint more sweetness so i added just a dash of honey and it tastes wonderful. Very dark and decadent. Thanks again. :) Lauren

  31. Lauren I am SO glad you loved the recipe! It's one of our favourite quick snacks. Make sure you like us on Facebook or Instagram as we're about to launch a delicious new Healthy Treats cookbook with lots of healthy single serve microwave recipes!

  32. Thank you. I am using a soup bowl and was doubling the receipe. I use the correct amount of cocoa but put in 3-4tbs raw honey, 3tbs liquid stevia and 2tbs whole wheat flour (could probably use ground fine oats or flax). I top it off with sugar free cool whip after it cools. So good!

    ReplyDelete
  33. Hi Christine, glad to find you found the perfect balance of ingredients to make it work for you! Enjoy! :)

    ReplyDelete
  34. Thank you for the recipie! I absolutely love dark chocolate and is has that taste exactly. I am trying to avoid salt and sugar for this new diet I am on, so I didn't add any salt and instead of maple sugar I just used half a packet of Splenda. Love it!

  35. Hey Christine, I am so glad you loved the recipe! Enjoy! :)

  36. Just made this and I'm eating it in between typing-it is DELICIOUS! I love dark chocolate (90% girl here hehe) and it tastes super rich and creamy! I had to cook it quite a bit longer than directed (about 50 min) to get a firm outer edge and somewhat gooey interior. I noticed it didn't rise quite a lot but it still was fine. I added in a bit of peppermint extract to get a minty flavour, and it worked like a charm :) I topped off the brownie with some natural almond butter and coconut cream. A great dessert for any time! Thank you so much for this simple but decadent recipe :)

  37. Hey Jenna, I am so glad you liked the recipe! Enjoy! :) xx

    ReplyDelete
  38. PS: We've got a microwave cookbook coming out soon that has HEAPS of single serve healthy desserts so be sure to keep an eye out for that! xx

    ReplyDelete
  39. Sorry but splenda is worse for you thank sugar:/ There's plenty info on it online

    ReplyDelete
  40. Hey Heidi, I agree with you on not liking Splenda but everyone is entitled to make their own choice when it comes to using it so it's important to respect that.

    ReplyDelete
  41. About how many calories are in the brownie?

    ReplyDelete
  42. Hi Marisa,
I know the total amount is under 100 but I don't know the exact amount off the top of my head. The calorie count will change according to your choice of ingredients/how much sweetener you choose to use, however, you can work out the calorie count using an app or website like My Fitness Pal

    ReplyDelete
  43. I microwaved this for 2 minutes, and it was completely mush :( sucks, I was looking forward to it.

    ReplyDelete
  44. Hi Emily, I'm sorry to hear it didn't work out for you! The oven version definitely ends up more solid than the microwave version, however, your edges definitely should have firmed up. How much maple syrup did you use?
