Recent Things: Puppy Love, Spring Sunshine and Smoothie Disasters


I feel like I'm always saying "It's Friday again!" because the weeks just seem to fly by! We've had a seriously busy week this week once again and we'll be busy busy busy all weekend (babysitting, church and family things) and then all of next week as well. Tonight is our last night for our youth group for the term as the kids are off on school holidays so we'll get two weeks of free Fridays - yippeeeee!

But let me show you what we've been up to this week; 

Corn on the Cob with Sauteed Mushrooms, Cheesy Potato Bake and Veggies

Recent Obsession: Corn on the cob and eggplant. My stomach just keeps getting better and I'm able to add more and more foods to my diet. Previously corn and eggplant were no-no's (as well as strawberries, grapes, snow peas, mango and coconut which I can now eat again!) but this past week I've been enjoying them with no issues! I am obsessed with baked corn on the cob <3 <3 <3 Up there is our veggie loaded dinner - baked corn on the cob with butter, mini cheesy potato bake, sauteed mushrooms and fresh veggie sticks.

Recent Cuteness: Miss Chanel Paige is always a source of cute in my life. Here she is post bath enjoying some time rubbish her face all over towels outside. It is seriously her favourite thing to do - she rolls around and has a big happy smile on her face the entire time.

Recent Love: A new recipe I've been working on! This is a Peanut Butter and Chocolate Swirl Bread that is low carb, grain free and high protein and so so so delicious! I'll be sharing the recipe next week so keep an eye out!

OzCook MyCook Machine

Recent Discovery: The MyCook! I went to the launch on Tuesday and now I seriously need one in my life. I'm not a fan of the Thermomix (I feel like it's over hyped and not very safe - especially with the steamer basket and plastic motor bits) but the MyCook (called the OzCook in Australia - but still the same machine Europe has been obsessed with for years) sparked my interest!

Recent Frustration: DOMS. Delayed Onset Muscle Soreness. AKA: The current bane of my existence. You see, on Wednesday I did a super kickboxing workout and I felt great - until late last night when my arms and legs felt like lead. Today it's just my left calf that hurts (randomly - I guess I favour that leg?) but DOMS drives me nuts whenever I have it because I'll be fine on a rest day and hurting on a workout day. #FirstWorldProblems

We usually mix it up with 2-3 workout days and 1 rest day, depending on our schedules. I think rest days are super important - especially if you're doing high impact workouts. I used to skip them but now I know that it's more beneficial for us to have rest days. That said, I still walk for half an hour each morning because my day just doesn't go as well if I don't get out and get moving in the morning (because I'm usually sitting at my desk all day!) - and then we workout in the evenings when Jesse gets home from work.

Recent Happiness: Spring sunshine-y weather! I am loving my morning walks in the sunshine and getting to sit outside and eat my lunch in the warmth <3 Bring on summer!

Smoothie with Carrot, Banana, Dates and Cinnamon

Recent Joy that turned into Terror: This smoothie. It was increeeeeeeeeeeeedible - and then I came inside and spilt said movie all over the kitchen bench. Waaaaaaaaaah :(

Recent Must-Do: I've been loving the SIL Sister's in Christ Bible Study series and faithfully spending time in God's word each morning. I know a lot of my fellow sisters have been shy to comment but I'm still loving your emails and knowing you're reading right along with me!

    This week, I have been enjoying crochet, I'm a beginner and I'm trying to make a blanket. Also I baked some yummy sugar-freeish brownies, and I'm enjoying taking daily walks.

  3. I bake gluten-free al the time now, but I've still never used coconut flour. This banana bread sounds delicious though! Looks like I'm going to have to add one more flour to my ever-growing collection:)

  4. Ahh I love workout muscle soreness!!! ^_^ Kind of masochistic of me I guess, haha. But keep on stretchin' them muscles like craaaaaaazy and you'll build more tolerance. And those potatoes look amazing! And corn is one of my absolute favorites as it's filled with fiber and a tinge of sweetness, so I have it almost everyday for lunch. ;) Glad you can jump on board with corn now.

  6. It's tricky to figure out, but so so delicious when used in the right recipe! Definitely try the Edward and Son's Coconut Flour as it's the best one I've found!

  9. Made this last night. As a matter of fact, I'm eating it for breakfast right now! :-) I added walnuts and cinnamon to my banana bread. Gave it a little kick. My boyfriend wasn't a huge fan, but that's because he's used to the unhealthy kind of banana bread. Personally, I like it! Perfect if you have a gluten intolerance, like me. Enjoy!

  11. Looks great!!! I don't eat nuts, do you think I could substitute the almond meal with 1/4 cup (or less) of coconut flour?

  12. Hey Brittany, can you eat sunflower or pepita/pumpkin seeds? Grinding those up into a meal/flour would be a great substitute or instead use 1/4 cup of ground flax.


    I wouldn't suggest swapping the almond meal for coconut flour as it would change the consistency of the loaf and you wouldn't get the delicious moist texture!

  13. Do you have a suggestion on what to use to replace the coconut flour? I personally cannot stand coconut... Otherwise this sounds amazing and I can't wait to try it!

  14. Hey! You actually can't taste coconut at all in this recipe. Jesse hates coconut but this is one of his favourite banana breads. I wouldn't suggest switching out the coconut flour as you'd completely change the texture and consistency of the bread (as coconut flour has very unique baking properties), however, perhaps try one of our other banana bread recipes;

    We've added chocolate chips and they worked perfectly, however, I haven't added blueberries as I have a feeling they'll add to much moisture and make the banana bread mushy.

  17. Hey Leslie, we've made this recipe with chocolate chips and it worked perfectly! I wouldn't suggest using blueberries as they'll most likely add too much moisture and make the loaf pretty gooey!

  18. I made this over the weekend, and it was SO good, not dry at all (as I see was a concern for a previous poster). I actually think it was even better the 2nd/3rd day. I guarantee you could pass this off at a party as "regular" banana bread, and nobody would know. The only "problem" I have with it... is that I live alone and have no concept of portion control : ( Good thing it's healthy!
