Phew! Friday again! This week seems to have flown by as I've sniffled and snuffled my way through a busy week. Luckily after a week of being sick with the flu I'm finally feeling a bit better and I have lotsssssss to share with you!
Recent Obsession: Homemade strawberry jam with cream cheese and gluten free english muffins.... or homemade strawberry jam on anything really.
I made strawberry jam with no refined sugars and just a teeeeensy wincey bit of maple syrup. Holy heaven, my friends - I can not wait to share the recipe with you because it's so easy and so delicious!
Recent Food Love: Eggs. We've been loving on all things eggs this week! (maybe we needed the protein from working out?) Frittatas, omelettes, crepes - you name it! One of the best combinations this week was a twist on our favourite Healthy Omelette Crepe Recipe - just filling the "crepes" with ham and cheese instead of chicken and pesto.
Truth is.... it was kinda of an accidental success.. Jesse asked for crepes for dinner, however, someone forgot to add flour to the mix and made omelette crepes instead :P At least they still tasted delicious!!
Recent Snack Love: This past week I've rekindled my popcorn love. The rest of the SIL family think I'm a weirdo, but there's no better popcorn topping than a dollop of peanut butter or almond butter. Above is a big ol' scoop of my beloved crunchy almond butter on salted popcorn <3
Recent Recipe Success: I've been on a mission to perfect the ultimate healthy paleo banana bread recipe that doesn't use 7 billion eggs or half a pound of fat and is moist and not crumbly in the slightest - and I've done it! After lots and lots of tweaking and testing I've come up with the perfect recipe that I cannot wait to share!
Recent Inspiration: I went to a Christmas Launch for Russell Hobbs and George Foreman earlier this week to see what new products they have in store for Christmas (and ohhhh goody are they good!) and it got me thinking about Christmas Recipes!
I definitely need to start thinking about what recipes I need to make SIL style this Christmas - so feel free to hit me with your suggestions and requests! Quite a few readers have already asked me for healthier Christmas recipes so I'm going to start working on them soon!

No popcorn, and NO banana bread?!?!?! Girl, what on earth are you doing to yourself?! ;) Don't worry - I doused it in cinnamon post photo and when we had raisins I added those too!
